A restaurant that exemplifies Japanese layout and design, Furosato is a destination for those seeking to eat authentic Japanese food in Bishkek. Sushi and sashimi are quick to come out, but selection is limited to only a few fish like salmon, tuna, mackerel, cooked shrimp, and a few other options. The cuts weren’t great because my three slices of tuna sashimi were still attached, like an accordion. The wasabi wasn’t fresh either, and was off-green color, almost grey. Tuna roll came with too much densely packed rice, compared to the amount of tuna. The tempura, however, was beautifully fried and came with a sauce that was refreshing and authentic, with grated mountain yam and slivered scallions on the side for more oomph.
The menu itself is quite long and has many options for even the most discerning of eaters. We sat outside in really nice shadowed place with subtle sprinklers for cooling. Was greeted by waitress and by japanese chef himself. If we had any doubts about nationality of the chef they disappeared the minute we got our food came. One of the best places with japanese cuisine outside of japan! What a surprise! Sushi with big pieces of fresh fish, rice which was maybe not fantastic, but really ok. But the other dishes like tuna carpaccio and unajuu were to die for!!! The service is warm, attentive, and genuinely caring. The owner is incredibly friendly, which makes the experience feel even more personal. But the true star is the food, authentic, fresh, and clearly made with so much love and care.
