Dissapointed . This year I decided to visit as many restaurants in the 120 culinaria mexicana list. I travelled from cdmx to visit some of the restaurants in Guadalajara and this was my first spot. I had high expectations as none of the restaurants in the list have disappointed... and then there was Hueso. It was Friday night, we were offered a seat at the bar, no biggie. Drinks were ok, service on the slower side. What surprised me is the menu selection seemed a little short but I though every dish must be very good. We were told they ran out of the salmon and shrimp, so we ordered the mussels. They arrived and they were good. The disappointment came with the second dish: ordered cowboy 1200 grams of beef. When the dish arrived at the first bite of the meet it tasted awful: the saltiest need I have ever tried. Without making too much fuss we returned plate to the kitchen. THE DISSAPOINTMENT WAS that the waitress told us that it was the fourth cowboy dish that they had returned because of the salt and that they had issues with the preparation! Why on earth did the chef allow a non safe for human consumption dish leave his kitchen and then after the first one was returned why did he allow 3 more of the same dish to leave the kitchen!! They took the dish out of the bill, but they did not offer a complimentary ANYTHING! This was a huge mistake and an apology “carajillo” would have been nice ... or some percent of discount or a complimentary dessert.... but nothing. Very bad management. It’s been twelve hours from the visit and I still can’t take the out the bad taste from my mouth and the heartburn that so much...
Read moreThe food and service here were the worst I’ve experienced since coming to Guadalajara. From the moment we arrived, the night was a disaster.
First, despite making a reservation, they didn’t have it marked down correctly. Instead of accommodating us properly, they sat us in a random corner outside the restaurant, as if we were an afterthought. Meanwhile, they had a massive party of 70 people inside, and it was clear that they were prioritizing them over everyone else. If they knew they had such a large group, they should have closed the restaurant to avoid overbooking and ruining other guests' experiences. The waiter did his best to serve us and offered us a bottle but he was alone in the upper area of the restaurant with two other parties and you could tell he was also struggling with the workload.
We waited an unbelievable three hours for our food. And when it finally arrived? Cold. The bone marrow was gelatinous, a clear sign that it hadn’t been served fresh, and one of the potatoes was completely burnt - the black thing in the photo is a potato. For a restaurant that claims to be of high caliber, this was absolutely unacceptable. When we asked for a replacement, they just microwaved the food and sent it back. The poor quality of both the service and the food was shocking.
The only thing remotely redeeming was the decor, which made for nice pictures—but I’d rather eat good food than just take photos in a pretty place....

The decor and ambiance was great, no fault there. The service was also great, if at times a little too much (trying a little too hard, loitering over us).
The food. Not great. On first impressions, for a fine dining venue, the plating was chaotic, far too many elements on one plate. It wasn't aesthetically pleasing. The flavours were also too much. It felt like they were trying to include far too many flavours and techniques for the sake of it.
The tortellini would have been fabulous if it weren't for the overly sugary, lemony crumble all over the top of it. We asked about this, thinking it might have been a mistake in the kitchen, but were told it was a choice to cut through the cream base (which was already sugary)...🤔
The short ribs were flavourful, but all 4 vegetables included in the dish, were so undercooked, and at the same time charred on the outside (beetroot, potato, zucchini and carrot) we could barely cut through them. This made the dishes partially inedible, which is not what you want when your paying for fine dining.
