My mama always said, “If you have nothing nice to say, don’t say anything”. Well we have nothing nice to say, but we will share our experience anyways. After an amazing Omakse dinner Saturday evening, we were thinking about ramen, we were recommended to try Hato by another couple at the dinner. We arrived at Hato an were seated in the staff “dining” area because we had our small 2kg dog with us. She has been welcomed everywhere we go, including Bruna and the Omakse we had last night, with no questions, but not at Hato, outside, in the front we were banished. Rocky table set with badly chipped plates to start with. We ordered the gyoza and kimchi to start, nasty. Calling what we received kimchi, a crime, the gyoza was crispy, cold and very salty swimming in some kind of very salty broth. Main course was a brisket ramen for me and a pork katsu for Brenda. We originally come from Vancouver we’re middle of the road ramen is excellent, here, not so much. Both ere served in chipped bowls, broth in the ramen was weak and tasteless, the brisket, if that was what it was, tasteless, the only good part was the egg. The katsu tasted like mayonnaise soaked rice with tasteless shredded pork. To bad, we’ve lived here in Mexico for the better part of 5 years an have generally eaten good, sadly not tonight. Read moreI've been to many ramen restaurants in many cities in the world. It's what I do when I travel since ramen is my favorite food. Of the ramen places I tried in Guadalajara, this one was the best in my time here. There was another one in the city that I was told was the best before but has not been living up to its reputation lately which I can concur with after two ramens there.
I have had four ramens at Hato. All are relatively and consistently good for ramen I've had in Mexico. My only minor issue was that the Tonkotsu could have been creamier, but that's more of a personal preference. Its 5/5 stars for Guadalajara (and not compared to ramen in other cities in the world). The approach is more akin to ramen that I see internationally vs. much ramen I see throughout Mexico which tends to be more what I'd call home-style. The limonada yuzu is refreshing as well.
I see that there have been some negative reviews about the service at Hato, but I didn't experience it in my two visits. Also, I do like the modern understated decor of the establishment as well - a bit of a Japanese aesthetic to reflect the food. Read moreThe good: the place is fantastic, it looks beyond beautiful, just the asthetic is simply immaculate. The service is immediate, very attentive personnel. Also the lemonade is exceptionally good.
The bad: the food is mediocre at best, i came with 3 people, one ordered the miso ramen, the broth tasted fermented and as if expired. I ordered a tonkotsu, and it was just disappointing, the broth was lacking, it tasted diluted and lacked much flavor, and the little flavor it had was completely overwhelmed by the generous amount of garlic the ramen had by the time i finished the noodles. Maybe someone else's palette might like the taste the garlic granted the broth, but i just couldn't finish the plate at that point. The pork itself has the same light taste of fermented, and it has zero texture, it taste either like pure fat, or as its been soaked for so long, it offers no resistance, and both do not contribute to the ramen. The noodles were passable, they lacked the taste any good ramen would have but they were edible. Overall, maybe check reviews on other items from the menu, but the miso and tonkotsu i seriously...
