Birria Santa Bárbara in Mexico City is renowned for its authentic Jalisco-style birria, and it lives up to the hype. The birria itself is a masterful creation: tender, slow-cooked beef (though traditionally goat in Jalisco, Santa Bárbara's beef version is lauded) that practically melts in your mouth. Each succulent piece of meat is deeply infused with a complex blend of dried chilies and spices, creating a rich, earthy, and subtly spicy flavor profile that is utterly addictive. The accompanying consommé, a vibrant, savory broth, is the heart of the experience – perfect for dipping the handmade tortillas or simply sipping on its own, especially if you're seeking a hangover cure or just pure comfort. While Birria Santa Bárbara is primarily celebrated for its birria, their torta ahogada is a revelation in its own right. Imagine a crusty bolillo roll, generously filled with that same tender, flavorful birria. Then, it's ceremoniously "drowned" in a fiery, vibrant red chile sauce, creating a symphony of textures and tastes. The bread soaks up the savory, spicy liquid, becoming soft and yielding on the inside while retaining a slight chew. The combination of the intensely flavored birria, the spicy, aromatic sauce, and the satisfying texture of the bread makes for a truly unforgettable bite. It's a messy, glorious indulgence that showcases the depth of Mexican culinary tradition. Both dishes are testaments to Birria Santa Bárbara's long-standing dedication to quality and flavor, making it a must-visit for any food enthusiast in Mexico City.

First time trying birria in CDMX and the taco sizes were very generous. I did find it a bit strange that the beef flavor wasn’t the star but rather the cheese. We had to ask for child because you don’t get any otherwise. It was a very home-y feel and satisfying meal but I will continue search for my favorite birria...
