Updated review and rating after second visit: A Chubbies manager saw my previous review and generously offered a second burger, on them. It was everything I had expected on the first visit but didn't get: deeply browned crust and beefy, juicy interior. I still don't think much of the fries or the pickles though, but I think anyone looking for a smashed burger in CDMX would be satisfied with Chubbies.

A good sandwich, but not a great burger.
Chubbies has been on my wishlist since I saw its videos on Instagram. It looked exactly like what I had been looking for in CDMX — a good smashed burger. (Note the -ed!)
When I finally got around to ordering one, since I live close by and don't believe in letting burgers and fries steam in their delivery boxes, my burger was not that. It did not look anything like the photos here or the videos. It was flat and pale grey with a brown ridges where the meat kissed the grill. There was no flavorful crust to speak of and it was impossibly thin, probably under 25% of the total sandwich. I think they took the concept of "smash" just a little too far.
Despite that, it was tasty, thanks mostly to the onion smash and cheese and a good if not great bun. I appreciated the pickles to add a tiny bit of crunch and some acidity, although as is often the case here, they were too soft, sweet not sour, and were lacking in vinegary bite.
The fries were good, if right on the verge of being dessicated. The portion of fries for an extra $25 peos was generous.
If I were to order from Chubbies again, I would add another patty, even though it's a steep 50 pesos. However, I'm probably going to move on to another...
Read moreThey aren't that good about calling you up for you to get your order, I had been waiting for at least 30 minutes before I got a simple order of a burger, fries and a milkshake at the counter and when I received it, the burger was still warm but it was clear it had been there for while, much like the milkshake that seemed like it had been melting for awhile there. While i understand that there might be a matter of a language barrier, but I do think i would have heard the number of my order being shouted since i was waiting right there next to the cashier's (it is worth mentioning that while I was waiting, somebody who was in charge of training the staff arrived and right when there was a huge line of delivery guys and customers waiting around for their orders, he started lecturing/training one of the girls that were working at the counter, leaving the other girl do the rest on her own, which i imagine caused her to forget to announce the orders that were ready. Kind of a mess with an overpowering sweet onions flavor. Not my thing. Unfortunate experience from the first time. It was not busy, much busier the 1st time.
