Oaxaca #11 (cafe/bakery #4): this was recommended to us by friends and our host, and it was one of my favorite spots in Oaxaca. We went three times during our one-week stay.
If you only order one thing: rol de dulce de leche y nuez
I loved everything about Pan c Madre from how early they open to their ordering system; from their lovely courtyard to their delicious pastries and coffee. I'm picky when it comes to bakeries and they delivered. They are on the level with top bakeries in CDMX IMO (which is high praise).
We initially came for coffee and pastries and ordered the rol de dulce de leche $42, bagel ajonjoli* $20, and an americano $45. The dulce de leche was heavenly. Laminated and not too sweet--so damn good. The bagel caught me off guard and was great. The americano was unassuming but super tasty, too.
We came back a few days later for my partner's birthday brekkie and ordered a tarta de carajillo $60, bagel queso $20, a garrita $50, and another americano $45.
We returned one more time right before our bus to Puerto to stock up on bagels to go, a foccaccia $50, and one last, divine rol de dulce de leche.
If you enjoy Pan con Madre and want to try another bakery, I highly recommend Sagrado...
Read moreEDIT: This gem has only gotten better. They now have seating, a lovely restroom, drinking water, and satisfyingly heavy stoneware and glassware from which to eat and drink. Just be sure to bring a small cushion if you cannot enjoy rustic wooden stools.
ORIGINAL REVIEW: Be sure to check out their schedule to know what's slated for exit from the ovens at what time. The ciabatta, for example, sells out most days within an hour or two. [It still sells well but i think they’ve expanded their production and now it’s not unusual to find a few remaining ciabattas for sale in the late afternoon.]
The sweet breads and cookies look divine but i love the bread so much i haven't tried a single pastry of theirs yet. [My goodness: i ate a cardamom pastry of theirs fresh out of the oven and my inner Scandinavian went into Nirvana.]
I've been a regular for a couple of months, since just before their move to this new location next to the taqueria Álvaro. The double-wide entrance they have now is great for olfactory advertising...

After a long day being enamored by Oaxaca and learning about its culture at the museum, I needed a Concha.
Pan de Madre was highly recommended so naturally, I had to go. To my surprise, they had freshly baked conchas. I asked if they had hot chocolate and they confirmed by charging me for one.
The server delivered a Lucious vanilla concha with a latte. Confused, I went to the cashier and asked for my hot cocoa. Instead of being accommodating, she played devil's advocate for several minutes by stating that I made the mistake of ordering a latte.
I have never seen an employee be so defensive. Next time, admit you made a mistake, and move on. Everyone makes them. I didn’t want to continue arguing with her and ate my concha but left the latte.
