Mr. Sam Asian Bistro — Restaurant in Amsterdam

Lost and alone, I was lucky enough to have my phone battery die as I walked up to the entrance of Mr Sam. I stopped in, an hour before they were scheduled to open and was met at the bar by Mr Sam himself.

He offered to charge my phone while he looked up the address I was searching for, an early dinner elsewhere with the in laws, while I enjoyed a glass of draft beer at the bar.

We discussed many topics while my phone charged and, with my own dinner plans approaching, I asked him which of the varied selection of €12.50 shared plates he thought best represented his young restaurant.

The crispy pork. I could see the pride on his face, I was instantly sold.

Oh my goodness. A juicy 250g pork belly with crispy skin on a sweet and tangy Asian sauce. Paired with sweet gooey centered yam fries, sprinkled with a chili salt that hit just right and a small salad. At just €12.50 this was a perfect small meal for one but I was already searching the menu for pairing dishes for next time.

To top it off Sam offered to drive me to meet my family at the other restaurant 2 miles away so I would surely be on time. He insisted.

A uniquely wonderful experience from beginning to end. Couldn't recommend Mr Sam's enough. I'm looking forward to my next visit and send my regards...

I used to be a huge fan of Sam's Bistro when it first opened. The interior was young, fresh, and stylish, with a unique, recognizable vibe. The fusion menu, blending flavors from across Asia, was bold and exciting. Their sushi, each roll with its distinct flavor, was the perfect start to a fantastic evening.

After the extensive renovation, we had high hopes. While we were warmly welcomed by our favorite manager, the rest of the service seemed disorganized. We waited a long time for our order, had multiple servers at our table, and our main dishes were delayed or forgotten. When they finally arrived, there was little effort to make up for the delay.

The food has shifted from fusion Asian to mostly Japanese, meaning many of our favorites were gone. While the spicy edamame and tempura beans were excellent, the sushi was disappointing—smaller portions, less distinctive flavors. The aubergine was fantastic, but the salmon teriyaki and lamb chops were underwhelming.

As for the new interior, it feels more like an elegant hotel restaurant, losing the hip, fun vibe that made...
