This is a complete capitalist joke. Poké is obviously a very easy way to make money (so I should have known), but this place has taken it to another level.
The staff (often the case in Poké places) doesn't have to do anything (low costs!), as the ingredients are either pre-made and defrosted (resulting in the most chewy/tough tofu I've ever tasted, while it was supposed to be 'crispy', and resulting in a horrible dressing) or not even prepared at all (90% of the 'Soy Joy' consisted of vegetables that aren't supposed to be eaten raw, or only in a certain context) which is, again, the cheapest way to prepare food. It just looked and tasted like a combination of canned and raw food.
The combination of sushi rice and soy sauce (which I ended up adding myself) works (to some extent...) as soy sauce masques a lot of bad flavors or gives a pretty okay flavor to flavorless stuff, which makes it possible for them to put as little effort into the rest of the ingredients (and good combinations of ingredients, 'Soy Joy' is truly a horrible one) as possible.
Poké is trendy (they have styled the place accordingly, but almost in a caricature-like manner), allowing them to set crazy high prices.

Turns out they didn't have over half of the ingredients I had selected on the machine. I had to remake my choices after payment while they were preparing it and noticing ingredients were missing. I tried to cancel my order since it wasn't really what I wanted and I was waiting for a long time but was told I wasn't able to. I also had to wait more than 40 minutes for spring rolls to come out of the kitchen when they mistakenly prorotized people that arrived after me, they had a mess on the order priority, mixing orders and ingredients. I feel like staff was untrained due to all the mistakes the lady preparing my bowl was making. Thought it might be a convenient hassle free fast food option but ended up spending almost an hour just waiting for the food.
