My experience at Selva was extraordinary. It is a culinary trip that takes you to the heart of Latin American Fusion flavors while enjoying Amsterdam’s skyline.
Starters: Pan de Yuca and Cheese: Selva's Pan de Yuca and Cheese sends guests to the streets of Brazil with its cheesy cassava bread accompanied by a soft chipotle butter, reminiscent of the beloved pão de queijo.
Sea Bass Ceviche Ají Amarillo: A burst of freshness, the ceviche had creamy leche de tigre, yellow pepper, habanero and a contrast of crunchy toasted corn, resulting in a delightful mix of textures and tastes. By far the best ceviche I have had in the Netherlands.
I had the opportunity to try some of their new additions to the menu. As a main I had Selva's Spicy Pumpkin Risotto. It was a flavor journey that paired creamy risotto rice with roasted pumpkin seeds, and spicy house oil creating an umami experience.
Desserts: Deconstructed Passionfruit Pie: it was a visual and culinary delight with a perfect balance of crunchy crust, tangy passion fruit mousse, and fluffy mini meringues! Never had anything like this before.
Torta de Maíz Nuevo: Soft and flavorful lemony corn cake with a velvety avocado cream. I thought the cream was a great balance!
Drinks: Peras al Vino with Ron Abuelo Añejo: The cocktail has a blend of rum and wine-infused pear leaving a super unique and lasting taste. It reminded me of fruity rum cake.
Auténtico Chardonnay Reserva 2022 Chile: Nutty and smooth, my table neighbor said that the wine enhanced the flavor of the risotto for her.

Read moreI never take the time out of my day to make a review unless it was actually an awful experience.. so here is my review.
I had contacted the restaurant via email to make a reservation after seeing a lot of positive reviews. We got to the facility and parked at the front of the hotel because my car does not fit over the bump into the parking garage. The facility was nice and the atmosphere was great. We got to the restaurant on the 24th floor, they took our jackets and seated us. Gave us a few minutes to choose our starters and this is where the chaos began. We asked for the waiter to come back in 2-3 minutes so we could choose our main dish.. 40 minutes go by and an entire starter until we got to even order our main dish. (We were given a 2 hour time limit until having to leave our table) I had a Tuna Tatar and my Partner had Bread with Cheese and Butter. Both starters were incredibly dry and bland. Like I truly mean Bland… it had no taste to it not even some salt or pepper??? Anyways it was still edible. The main course was then just the next level.. My steak was of awful quality, had no pepper no salt and literally no taste. The Califlower was literally just a big blob on the table it was charred on the outside a tiny bit and on the inside cold and raw. Also had no flavor whatsoever and there wasn’t any kind of sauce or nothing to really go with it. The potato’s had some flavor to them but not much. The Yuca Fries and Fried Banana were extremely awful. Both felt and tasted like a dish that was reheated in the microwave. We did not eat any of our meals here as it was literally just… tasteless and nasty.
Overall every dish was dry, bland, flavorless, missing simple spices and it was all just nasty.
The service was nice they did remove these foods from our tab but it was still a waste of our time and theirs.
I would even recommend McDonalds over...
