Fusion is also walking distance from Bucuti, so we decided to give it a shot. Ive read some complaints that Fusion adds an 18% service charge to the tab. That fact is clearly stated on both pages of the nicely backlit menu and the charge is evenly shared with all servers. The benefit here is all servers are equally motivated to help all patrons. If you like the service, which we did, slip your assigned server a little more in cash. You will be appreciated and remembered. We sat at the bar and enjoyed being served by Jetho (I hope I spelled that correctly) - he was absolutely great and very friendly.
The ceveche at Fusions, which includes a dash of passion fruit juice to the normal prep, was delicious - possibly the best I've had north of the equator and the serving was HUGE. On what ended up being the first of three meals at Fusion, we split the rack of lamb. It was good, but not great. Did I mention the ceveche was amazing... :) On our next visit we got two orders of ceveche and shared the salmon dish, which was very good. On the third visit we again had two orders of ceveche and split the ten ounce sirloin. We come from steak country so are VERY particular about quality and prep, and we both thought it great - cooked perfectly with a slight char, but still medium rare, very favorable and very tender.
A couple we became friends with at Bucuti went to Fusion at least twice and ordered the special - huge rib-eye with two lobster tails and a bottle of wine. They loved it and said the lobster tails were sweet and excellent. That is a big vote of confidence since they come from U.S. lobster territory and the tails at Fusion are Caribbean lobster.

We set up a 5 pm reservation and got there about 10 minutes early and it wasnât even opening till five so we killed a few minutes looking around at five walked up to the doors and a gentleman asked if he could help us. We said we had a 5 pm reservation and he said âok, we are not quite open and maybe 5 more minutes. 15 minutes later they finally slid all the doors open so we walk up again and a young lady asked how she could help us and again, âwe had a 5 pm reservation. She lets us choose our seat given the place was empty, brought us water and menus and let us do our pickings. Chantel was her name and she really was friendly and welcoming. I was doing my best to not be annoyed with taking a reservation and not even being able to open at that time. We ordered a bottle of sauv blanc that was a rather pricey for a New Zeland white wine at $66. The Babes ordered the wagyu burger, and I order the fish Nâ chips. I will add the uniqueness of this FnC was superb, maybe the best Iâbe ever had and The Babes loved her burger. At the end we got our tab and noticed the gal forgot to add our wine, I was honest and told her and she promptly added the $66 doubling the tab. I was kinda hoping for a reduction for my honesty but whatever. If you want great food I do recommend Fusion. I personally just thought there system was off and for a place trying to come off as a hotspot hangout they need to be better on top in the performance. For $107, my wife and I got steaks that were the size of hockey pucks. I seriously wish I was embellishing that. Even funnier my steak was advertised as a 10 oz butcher cut but as soon as I ordered it I got told itâs 6 oz. Still got charged the full $38 thatâs next to â10 ozâ on the menu. So bad start with a bait and switch right away. I wanted a steak so I figured the taste would be impressive. Nope. For Americans, longhorn steakhouse blows these guys away just as a chain restaurant. The $12 salad bowl was regular sized and was good. The truffle mac and cheese was more Mac and cheese with white sauce on it. Not a lot of truffle. That was kind of the whole theme here: itâs near a casino and has atmosphere so weâre charging a lot but doing everything we can to save money. Even on this island where your average meal can easily be $100 for 2 people for a GOOD meal, this falls towards the bottom on that list. First meal in 5 days I was glad to be getting my money back via a tax deduction. We wanted to try the ice cream bucket but assumed weâd have to go dig the ice cream ourselves out of the freezer.
Waitress was quick and attentive. As others have mentioned, we were charged an 18% service charge and when we got to the tip, we got a new âok weâre doneâ slam my card in the machine and a quick âbyeâ from the waitress. So, again gives the feel of âhurry get the customers money and give them our at best mid quality food, and get em out of here.â
