Pelican Bistro — Restaurant in Saint Martin

Unfortunately disappointed! We have been going there for years since it opened and has always been a favorite. HOWEVER, this time was horrible (7/19/2025 at 8am). We got our order to go. Before we left, my daughter tasted her latte which was not correct and asked if they could add just a little bit of coffee and she was told no and would have to “purchase a shot” so she threw it in the trash before we left. After we walked back to our Villa, we opened our waffles to only discover that they were not cooked the whole way through. I then realized that she never gave me the bottle water I asked for either. I put the waffles back into the bag and walked over to get the water. I handed her the waffles and said these aren’t edible. I politely explained the situation to which nothing was offered to make it right SO I’m writing this review. Side note, she didn’t hesitate to ask for that tip when I paid. After driving around with our girls on a Sunday… most places were closed, and the ones that were opened only take cash (was our last day of vacation- our cash was gone). We finally found these adorable small breakfast and cafe opened that that take credit cards. Everything we ordered was deliciously made. Our sandwiches and waffles. I had an iced caramel macchiato, my husband had a medium cappuccino, and for our girls we ordered a passionfruit and mango smoothie. ALL were amazing! AMAZING! I can't express enough how great this place is. For one, they make everything as you order it so it's always fresh. I had the waffles one day and the honey mustard sandwich the next and both were delicious! I had a chai latte everyday that was made perfect to drink (I always ordered hot and the temperature was great). My husband had the berry lemonade and he loved it. The owner and chefs are absolutely wonderful! We went there almost every day on our trip. I had pinned some other breakfast spots but none of them set the bar for pelican bistro.
