Ik houd altijd het menu in de gaten en wacht tot het juiste moment. Daar de chef een voorkeur heeft voor vegetarische gerechten en ik van luxe ingrediënten duurde het wat langer dan verwacht. Fijn dat de temperatuur buiten ook meewerkte.

We kozen een plekje aan de bar waar we de souschef in actie zagen, leuk. Als aperitief een SL Riesling Trocken 2019 van Schloss Lieser die uitstekend beviel. Ernaast een hard krokantje met een avocado dip. Niet veel smaakbeleving.

Gevolgd door het amuse trio. Een shot van watermeloen gazpacho met sechuan button en olie van chili, mooie complexe smaakbeleving. Geschroeide jonge mais met zeste van kafir lime met op een frisse koffie dip met een crunch van popcorn, verrassende smaken en goede bite. Cakeje van zwarte olijf met humus van kerrie en crumble van gerookte olijf, erg lekker.

De eerste begeleider werd beknopt gepresenteerd door een jonge dame, Dom Diogo Padeiro Rosé 2021 van Quinta da Raza. Deze deed mij aan limonade denken vanwege het ronde aardbeien aroma en de redelijk krachtige mousse. Op een wit bord een strakke presentatie. Een keurig getrancheerde borstfile van Anjou duif (kort op 58 graden gegaard) waarnaast Nigiri sushi van gerookte ananas gelakt met zoete, pittige sojasaus van Tomasu in een vinaigrette van sambai en sesam. Krachtige smaken met intense zuren en mooie umami toets waarin de delicate duif een beetje verloren ging. De speciale wijn kon het aan. Verrassend en zeer origineel. (8)

Door met een hele rijpe Riesling spätlese 1994 uit Slovenië van Ljutomer Ormoz. In het glas een diepe goud gele kleur, in het aroma tonen van beurse golden delicious appel met subtiele kruiden en een vleugje oxidatief, in de mond slank met verfijnde zuren. Ernaast de topper van de middag. Twee gebakken langoustine staarten in een schuimige saus van witte chocolade met langoustine bouillon en zeste van limoen waarnaast een cannelloni van komkommer gevuld met mangoblokjes en chilipeper afgewerkt met dotjes mango gel. Een hoofdrol voor de heerlijke langoustine met mooie zoetzure en licht pikante accenten waarbij de speciale wijn keurig aansloot. (9) Partner ging uit haar dak met haar drie bereidingen van rettich, vlierbloesem en cepes.

Als dessertwijn een Scheurebe Spätlese 2021 van Ernst Bretz mooi hoog in zijn zuren met tonen van ananas en sappige witte perzik. Op een wit bord een echte smaakbom. Als basis abrikoos met miso in een vinaigrette van sake en verveine, erop een quenelle sorbetijs van abrikoos met yuzu, dotjes misofudge, merengue plaatjes van yuzu met een crunch van pinda en crispy sesamkrokantjes. Heerlijke smaken met intense zuren die de suikers verbloemden, goede umami toets en prima texturen. De wijn bleef verrassend goed overeind naast deze bombastische smaken. (8,5)

Als afsluiter een krachtige espresso met in een glaasje een hele frisse friandise, prima.

Bediening was zeer goed tot uitstekend verzorgd, een hoofdrol voor de enthousiaste souschef met gedetailleerde uitleg bij de gerechten en gezelligheid, ondersteund door twee jonge dames.

Samengevat waren we wederom onder de indruk, gerechten met originele smakencombinaties en veel smaakbeleving waarnaast keurig geselecteerde wijnen. Dat in een fijne ambiance met entertainment en zeer...

We had a six-course diner here at Houtloods. The welcome was warm and friendly and this did not change throughout our diner. The amuses were nice but not memorable. Our first course included an oyster and mackerel in two separate dishes. This was spot on. Our second course was a cauliflower dish that I also loved. The third and fourth included a gamba with paprika mousse and guinea fowl with roasted romaine, Parmesan, and candied pecan nuts. Although the oils used became a little much by this point, it was still tasty. Then came the desert. A chocolate tartelette with a chocolate mousse and chocolate drops, accompanied with a very sour sorbet (I forgot the name of the fruit). Unfortunately this did not complement the chocolate side of the dish at all, which was more of a subtle flavour.

I would recommend going as the prices were not super high, but you’ll find dishes to be better...

A few of the meat dishes were a bit dry. Prepared too far ahead of time? Only two out of six dishes were spot on. Not a good score...

All in all, well presented dishes, but some of the recipes needed more work and were just a bit pretentious and misaligned. 'Subtle flavours' does not equal 'refined'. Would have preferred 'less prettyness' and 'more flavours' on my plate. It was a bit of hit and miss, which is not in line with the prices.

I read elsewhere that people had an epic tasting experience... Unfortunately that didn't happen with the surprise menu that was...

The only side note I can give is that they served me three vegetarian dishes as well, even though I saw the 'winter' menu for fish & meat was different. I asked them during dinner and the staff insisted that I will get meat and fish later, but to my surprise the table next to me had the same dishes, with meat. I will not subtract a star since everything else was so well composed, especially the quality of the dishes and wines that were paired with them.

Wonderful experience. The food was superb and the same can be said for their service. We went here as a surprise for my partners birthday and they facilitated so many things in order to make it extra special. There was a vegetarian menu available which was very pleasant for my partner. The only side note I can give is that they served me three vegetarian dishes as well, even though I saw the 'winter' menu for fish & meat was different. I asked them during dinner and the staff insisted that I will get meat and fish later, but to my surprise the table next to me had the same dishes, with meat. I think the food concept is not my style, it consists of very complex ingredients and textures that sometimes where too much or too bland. This comment was shared in the table a couple of times.
