We ordered a main course of sashimi, and to my surprise, they didn’t bring out a collection of cheaper fishes to accompany just a few pieces of salmon like in other restaurants. All of the pieces were high-end seafood. In fact, salmon was among the cheaper ones on the plate. Our tummies were well-fed after the main course (with some space for extra food still, of course), so all in all the price wasn’t really that expensive. The waitress carefully told us that the sashimi should be paired with a special type of sauce called ponzu instead of the regular soya sauce. Seeing that the soya sauce was not the regular type that other restaurants offered, I also sniffed it and realized it was some sort of crafted mix—not something that could be bought from the store. Ponzu sauce did pair quite well with the more traditional Japanese fish types while soya sauce went better with salmon. We continued with an order of spicy salmon maki, thinking that it was just to fill up our tummy, but we were wrong. It was probably one of the most memorable moments during the whole experience. First, the chef brought the dish to our table by himself (with a smile). Second, the moment i picked up a piece, I could immediately smell the incredible fragrance of grilled sesame seeds. The roll was small compared to some other places but the main ingredient was clearly salmon while the rice as well as veggies were just there to complement the salmon—in other restaurants, they usually fill up the rolls with rice and cheap veggies like cucumbers and lettuce, hence the salmon accounts for just a small part of the roll. When i started chewing, it was just so perfect. The sauce was so well balanced and the salmon mixed very well with the parsley or some similar veggie that he mixed in there. I had always known that cucumbers and lettuce were kinda wrong for sushi because they sort of cheapened the overall taste. The maki was the best I’d ever tasted (and smelled) anywhere even though spicy salmon maki was such a common sushi dish. I soon realized the maki roll was small not because they wanted to reduce the cost but because it was the perfect size—the correct amount of rice and parsley and sauce (although seemingly little) to pair with the salmon (surprisingly plentiful). The salmon also had a good balance of fat vs meat that helped enhance the taste. We moved on to the nigiri and omg, so many questions finally had answers lol. For example, I knew that one was supposed to dip the salmon part of the sake nigiri into the sauce—not the rice part—but never understood how one could do that without breaking the nigiri apart. Well, the salmon nigiri here was prepared so that the salmon piece was big enough to cover both sides of the rice, hence one could hold up the entire nigiri easily with chopsticks and dip the salmon part into the sauce without accidentally dipping the rice underneath into the sauce as well. Also we could see that they didn’t cheat by filling up our tummies with rice like other restaurants. Rice was always just a small part and the fish was always the vedette. This means the price was high for a good reason. The eel nigiri was perfect as well. The eel piece was very big compared to other restaurants and it tasted so fresh and juicy. The sauce on top was just perfect—no need to dip the nigiri into any extra sauce.

The scallops were silky and clean, with a subtle ocean aroma — never fishy, just pure and briny-sweet. Even the seared salmon added a lovely contrast, slightly smoky and caramelized on the edges but still tender inside. A touch of wasabi and soy brought everything to life.
The nigiri selection carried that same level of excellence — perfectly seasoned rice that held together but never felt dense, balancing the delicate textures of the fish. The shrimp was firm and naturally sweet, while the seared pieces had that irresistible hint of char that brought depth without overpowering.
Then came the rolls, each with its own personality. The avocado-topped roll was smooth and creamy, crowned with bright, popping roe that added little bursts of flavor. The spicy rolls in the center were rich, layered, and satisfying — with creamy sauces and a gentle heat that lingered pleasantly. The grilled rolls, drizzled in a slightly smoky, sweet soy glaze, were a decadent finish — crisp on the outside, tender inside, and full of umami.
Every element, from the fresh ginger to the neatly portioned wasabi, was thoughtfully presented and of top quality. Even the textures stood out — from the crisp nori to the airy crunch in the tempura pieces.

No thin slices to save fish.. here everything's made for fixing up your tongue with the wonders of Japanese cuisine. If I am going to say something about the experience that I might disagree with the chef on; I personally like salmon sashimi better with soy sauce than the ponzu sauce. The ponzu sauce however, really drives the yellowtail and the tuna to a different level. This Sushi experience now ranks as The best food experience I have ever had.
