We were driving back after a quick stay in Subic and had the wonderful good fortune of spotting Nomad cafe. What an excellent place it is.
It was very obvious for the design and layout of the cafe that the owners had put a great deal of effort in getting the ambience and atmosphere spot on! It really matches what I feel is the essence of the Nomad lifestyle.
What is even better is that followed up with pitch perfect coffee made by extremely well trained baristas. Food and service was also excellent.

We saw the signage that they market itself as a specialty coffee destination, so we decided to try. Unfortunately, it fell far short of that promise. The coffee was lacking the nuanced flavors you'd expect from quality beans. But I also noticed that the beans don’t even have labels.
