STOP searching , this is THE PLACE. We were fortunate enough to find this lovely hidden gem run by two chefs, Joao Narigueta and Filipe Rebocho, whom worked in Michelin star restaurants. It is all organic natural and sourced from local producers within 30 KM radius and the dishes are all new variations of old PORTUGESE cuisine in the new world. I’m not talking about the confusing Fusion food that doesn’t mean anything. These guys have figured out how to marry the old and the new and I would not be surprised if they get their Michelin star soon.. We were so so fortunate to find them and enjoy their lovely dishes paired with natural wines, it was the highlight of our trip to Evora. GO before it becomes too popular!!

Very pretty room and sweet if stumbling service, with the waitress not knowing what wines were available by the glass even though there were very few. She also never asked us whether we wanted water. We had high hopes, having read reviews that suggested that this was a Michelin level restaurant, but our first dish, a crayfish ravioli in a miso broth, was very disappointing, with the ravioli barely cooked, which was pretty shocking. A "river fish" dish was OK, as was an octopus dish, but the beef in a clove spiced cream was excellent. The highlight of the meal was the white chocolate mousse with a fruit vinegar. I'd come back just for that!

The wine ‘Tinto do Tareco’ is a light and uplifting wine, in homage to homemade wines, made in small pots of clay, also known as tarecos. We had some cups of different Alentejo wines before tareco. All were excellent. The staff usually recommends the choice of the day in regards to wine. Try booking in advance, given that the place is small and tends to get full, especially during holidays and weekends.

Hibrido is an absolute must if you are looking for an incredible culinary experience, complimented with an intimate setting and amazing service from the beautiful waitress and chef team! The restaurant is well located in historic Évora and provides a nice setting for a special meal. The menu is tightly curated from seasonal and local produce and artisanal ingredients. Each dish is the perfect balance of seasoning, flavour, texture and freshness. We ordered the entire menu and shared across a group of 4, with 4x starters and 3x mains and finished with 2x desserts. Every dish was exquisite!! The waitress was divine and spent time explaining the history and chef’s inspiration for each dish, along with the specific components that had been sourced locally. The wine selection is well curated and the waitress suggested perfect pairings for the menu. One of the best dining experiences in my life!! Well done Hibrido...

We went here for lunch yesterday and we were very impressed. The small restaurant is a nicely decorated (think a mix of Japanese / Scandinavian interior) and has a relatively short menu (around 8 dishes and a few deserts). These dishes are not overly 'engineered' for the eye, but excel in simplicity and rely on the purity and quality of the ingredients used. My husband is Danish and we certainly recognised some features of the Nordic cuisine here : not too much ingredients, not too much processing of ingredients, but - on the contrary - rely on the quality and choice of ingredients to elevate the taste to a sublime level. Well done guys - you are doing a fantastic job ! Totally...
