소리원 — Restaurant in Jeju

Had the jjamppong and I would like to believe that the sweetness of the soup is coming from the vegetables since there’s still many onions, carrots and cabbages left even though I tried to eat most of it (trying to stay healthy by eating more vegetables, yep TMI 🙈) the broth doesn’t taste very salty that’s why I felt that not much MSG is added. There’s lots of seafood too (prawns, squids, mussels, clams)

Had the sweet and sour pork (small) and do remember to make your own sauce (chilli powder + vinegar (more so that it’s more sour than salty) + soy sauce) otherwise you are only going to have sweet pork if you dip into the brown sweet sauce! We didn’t know we had to make the sauce till the owner shared with us how to enjoy this dish and this sauce + sweet sauce make the pork...

Great place I found near my hotel when I was looking for some jajiangmyeon.

"단맛이 망쳐버린 멋진 간짜장"

제주도 왔으니 제주도의 간짜장을 맛봐야한다. 소리원도 꼭 한 번 간짜장을 먹어보고 싶은 집으로 찝어둔 곳이다.

평범하게 생긴 곳인데 모든 필요컨디먼츠와 물품이 테이블에 정신없이 올려 있는 것은 아쉽다. 홀 중간에 접시나 가위, 집게 등 모든 것을 셀프화 시켰다. 점원이 세 명이나 있는데 말이다. 한 명은 계산대에서 꼼짝하지 않고 두 명은 딱 음식 주문과 음식 배달만 한다. 바쁜 시간엔 손님이 무지 많은가? 할 정도로 요즘 세상에 과한 인력 투입이라고 생각이 되는 부분이 있다. 그러면서 참 무미건조하고 느낌 없는 서빙이다.

동네 중국집에 맛만 있으면 되긴 하니 간짜장 하나 주문하고 기다렸다. 주방에서 제트엔진 소리와 함께 나의 장이 볶아지는 소리가 선명하다. 그리고 서빙된 간짜장.

간짜장은 참 멋지다. 기름 많이 쓰인 장은 새까맣다. 대량의 기름으로 넉넉하게 춘장을 써서 볶아낸 모양이다.

기름이 넉넉하지 쓱쓱 잘 비벼진다. 물기가 많은게 아니라 기름의 미끄러움이다. 맛은 강하다. 춘장맛도 강하고 그에 상응하는 감칠감도 좋다. 다만 이를 뛰어넘는 놀라운 단맛이 아쉽다. 춘장- 감칠 - 단맛의 정삼각형 중에 단맛만 너무 튄다. 강함을 뛰어 넘는 놀라운 진함. 그 튐이 다른 두 요소를 죽인다.

아쉽다. 맛있는 맛인데 단맛이라는...
