This is one of BEST four Tripe restaurants in Korea. It specializes in grilled beef intestines since year 1991 and has been listed on #BlueRibbonSurvey since year 2017.
Gopchang is beef Intestines, just like the Chitterlings (or Chitlins) in southern US. A Cow has 4 stomachs, the first one is Beef Tripe (양), the second is honeycomb Tripe (벌집양 or 벌집위), the third is Omasum (천엽) and the forth is Abomasum (막창 or 홍창). When you order Combination (26K KRW), you can try all of them. As all fresh ingredients are grilled on a stone plate over high heat, the best condition of Gopchang can be enjoyed together with Onions and potatoes. Especially, the honeycomb Tripe, 2nd stomach of cow (벌집양, 소의 두번째 위) is really savory. The Kimchi Stir-fried rice on the stone plate can be ordered at 3K. Cold Seaweed Soup (미역냉국) and Omasum (천엽) are served as side dishes, which are also delicacies.
