Menya Hanabi is the name of the first restaurant in Nagoya who developed Mazesoba, and this restaurant is a Korean branch which was also introduced from the famous TV program, Wednesday Food Talk (Suyomisikhoe) and SBS Master of Living for Mazesoba. Mazesoba means, mixed noodles, such as the Ramen without soup in Taiwanese style. It was developed in year 2008 and now very popular in Japan, even though many others try to imitate the taste. The noodles are chewy and the sauce is delectable with the harmony of many ingredients - soft boiled egg, spicy minced pork, chashu as well as green onion and seaweed. After eating one third of noodles, adding kelp vinegar on noodles is recommendable which presents different flavors of this cuisine. The delicacy of Mazesoba is to mix rice with the leftover sauce. (The rice is provided free of charge) Shoyu Ramen is also recommendable. Also with chewy noodles, the soup has rich and savory taste. It goes well with other ingredients, each different mouthfeel – soft boiled egg, chewy chashu and bamboo shoot. One thing I want to ask is that they prepare food while talking to each other a lot in the kitchen, so I hope they wear a mask. Otherwise, the dining is enjoyable in young and cozy ambience along with kind and energetic staffs. There is neither valet parking nor validated parking lots, but there is a public parking lots nearby (about 2 minutes’ walk.)

Think their noodles have been toned down since Koreans rather have relatively less seasoned noodle with heavily seasoned sides. Personally I would have liked it better, had their noodles been more seasoned. BTW, they tend to have people lined up and waiting to show off. Expect at least 10 to 15 minutes waiting before you are escorted to your seat and served.

This is a branch of the original Restaurant in Nagoya and it shows, it's made with care and cooked to perfection. I usually go for the more special options, but I can recommend everyone the original. You can still add toppings like an egg, spring onions or others.
