Menya Hanabi is the name of the first restaurant in Nagoya who developed Mazesoba, and this restaurant is a Korean branch which was also introduced from the famous TV program, Wednesday Food Talk (Suyomisikhoe) and SBS Master of Living for Mazesoba.
Mazesoba means, mixed noodles, such as the Ramen without soup in Taiwanese style. It was developed in year 2008 and now very popular in Japan, even though many others try to imitate the taste. The noodles are chewy and the sauce is delectable with the harmony of many ingredients - soft boiled egg, spicy minced pork, chashu as well as green onion and seaweed. After eating one third of noodles, adding kelp vinegar on noodles is recommendable which presents different flavors of this cuisine. The delicacy of Mazesoba is to mix rice with the leftover sauce. Shoyu Ramen is also recommendable. Also with chewy noodles, the soup has rich and savory taste. It goes well with other ingredients, each different mouthfeel – soft boiled egg, chewy chashu and bamboo shoot.
One thing I want to ask is that they prepare food while talking to each other a lot in the kitchen, so I hope they wear a mask.
