We had the pleasure of dining here twice during our weeklong vacation in May. We originally booked the restaurant based on a recommendation from a local guide. Apparently, Carbon Carbon was opened last December after the owner sold his former restaurant Toro in Tias. After having a wonderful experience the first night at Carbon Carbon, we decided to book a second reservation for our final night in Lanzarote. Daniel, the manager, and his staff were cheerful, very thorough in the explanation of their fabulous meats, and always very attentive with their service. Daniel was very helpful In providing understanding of their steak preparation process and wine pairings. All the dishes were prepared with great craftsmanship and very deep flavors.
The meal started with an appetizer complements of the house. One night was salmarejo and the second night was fresh, local cheese paired with gofrio (a Canarian specialty). Their grilled finca de uga cheese timbale appetizer was a smoky salad course with sweet chutney and grilled cheese which reminded us of the best American barbecue flavors. Their steaks were weighed table side, cooked to perfection, and also served with a tabletop grill to adjust your meat temperature (if you desire). We have been very fortunate to enjoy some of the finest steaks in the world (Peter Lugar New York, El Capricho, Bistecca alla Fiorentina, etc.) and can confidently say, that Carbon Carbon is equal to the absolute best! Este local, especializado en cortes premium a la parrilla, combina una estética moderna y acogedora —con tonos oscuros y dorados— con vistas al puerto deportivo, creando un ambiente sofisticado pero íntimo.
Comenzamos con una botella de vino D.O. Ribera del Duero y pan de Los Valles, acompañado de aceites de oliva virgen variedades Picual y Arbequina. Como entrante, probamos un tartar de carne exquisitamente condimentado, seguido de un chuletón de vaca Simmental (raza suiza originaria del valle de Simme, en el cantón de Berna), servido con patatas y hortalizas. El restaurante añadió un detalle notable: una parrilla cúbica con carbón para que pudiéramos ajustar el punto de la carne a nuestro gusto. La experiencia fue tan gratificante que requirió una segunda botella de vino.
Tras la comida, llegó el momento de los espirituosos: aguardiente Santiamén y Grappa, este último un destilado italiano de orujo que me evocó recuerdos de un viaje a Porto Empedocle (Sicilia) en 2021, donde lo disfruté con dos amigas italianas, Ludovica y Domenica. La sobremesa, animada por una conversación relajada y prolongada, se alargó hasta la noche, y el personal —especialmente Pablo, un camarero gallego de trato impecable— nos sorprendió con un obsequio final: huevos estrellados con jamón serrano y patatas fritas.
Aspectos destacados: Calidad de los productos: Desde los cortes de carne hasta los acompañamientos y bebidas, todo fue seleccionado con esmero. Servicio excelente: El equipo, liderado por Pablo, demostró profesionalidad y conocimientos en vinos y carnes, ofreciendo consejos acertados. Detalles diferenciadores: La parrilla portátil y el obsequio final reflejaron una atención al cliente sobresaliente. Relación calidad-precio: Aunque orientado a un público de nivel medio-alto, la experiencia justifica el coste.
