Txiriboga — Restaurant in Bilbao

This was our second visit to Bilbao in recent years and, without question, this is our favourite place. We've been here every day and sometimes more than once. The team are super friendly, genuinely keen to talk about the food and their backgrounds. You never feel like your a travelling cash cow. The pintxos are top notch too. Isabella, the cook, is constantly bringing our tray after tray of fresh food. And, the quality is superb. Our faves were the tomato and avocado on bread topped with Japanese style seaweed (simply delicious) and the gildas, themselves a perfect balance of acidity, salinity and umami. But, we tried lots from the two different tuna pintxos, the bacalao, the anchovy and crab. The list goes on and all of them perfect. Next time, we're in Bilbao we'll be heading straight back her. If you arrive when it's busy and can't find a seat, just wait and one soon frees up. It's worth hanging...

Hemos tenido el placer de presenciar esta mañana una escena que describe muy bien el comportamiento de los clientes en muchas ocasiones en hostelería. Y es que las malas formas con que se trata a veces a los camareros es digna de ser estudiada. Menuda paciencia tienen... Mi reseña en este caso va para ellos, los camareros del Txiriboga, que con todo el trabajo que tenían han sabido llevarlo con humor, buen hacer y rapidez. Y más en concreto para dos de ellos. Primero para el camarero bajito, que a pesar de ser bastante correcto, un cliente fue muy grosero con él por no saber esperar. Y segundo para la camarera rubia, que hay que ver con qué tranquilidad, templanza y profesionalidad resolvió el problema acto seguido y en un momento. Su actitud fue exquisita. Nos encantó cómo calmó a todos. Tanto cómo atendió al señor, que pidió su consumición y se quedó degustándola como la actitud que tuvo con su compañero, al cual pudimos ver mientras tomábamos el marianito de la casa cómo le animaba a cada rato. De verdad que un 10 para ella. Para todos, a nosotros nos habéis encantado. Voy a añadir también que los marianitos preparados estaban muy ricos y las rabassss espectaculares! De broche final pedimos la txistorra picante y esa fue la excusa perfecta para repetir otra ronda de marianitos con su "preparado Txiriboga", secreto como bien dicen de la casa, el cual tienen expuesto en una garrafa de cristal para que se vea con su cartel. Average. I didn't try the croquette pintxo, which seems to be the speciality. But what I did try seemed to be a bit more style over substance. I had a spicy sausage wrapped in pastry covered in sweet chili sauce. It looked very good on the counter but all I could taste was the spiciness of the chili sauce, which I have a suspicion was added in such large quantities to mask people noticing it had gone cold sitting on...
