Billy Brunch Sevilla is an absolute gem that I stumbled upon and one that I’ll be recommending to anyone visiting this city. From the moment you walk in, the atmosphere strikes the perfect balance between lively and relaxed – it has that modern, cosmopolitan energy you’d expect from a London brunch spot, yet with the laid-back charm and warmth that only Seville can offer.

The food was nothing short of spectacular. I went for the superfood omelette and it was absolute perfection on a plate – fresh, wholesome, and bursting with flavour. You can tell the ingredients are chosen with care and the dishes are put together with real thought, not just to satisfy but to delight. To top it off, I bravely (and very gladly) took on their sangria – a true mammoth of a task. It was refreshing, fruity, and dangerously drinkable… easily one of the best sangrias I’ve had in Spain.

The staff made the experience even more special. Every single person I interacted with was warm, attentive, and genuinely friendly, striking that perfect balance of professionalism and easy charm. You never feel rushed, yet you’re never left waiting – the kind of service that makes you want to linger.

And then there’s Maria, the owner. What a breath of fresh air. She’s curated Billy Brunch Sevilla with such care and vision, weaving her experiences of living in London into the fabric of this space, while still capturing the soul and ease of Seville life. Maria herself is welcoming, radiant, and truly a gem; you sense instantly that this is more than just a restaurant to her, it’s an extension of her passion and creativity.

I recently had the pleasure of dining at Billy Brunch, and I must say, it was an amazing experience from start to finish. The highlight of my meal was undoubtedly the shakshuka, which not only arrived piping hot but was bursting with incredible flavor. It was a delightful combination of spices and perfectly cooked eggs.

What pleasantly surprised me were the pancakes. I'm not typically a fan of pancakes because they tend to be overly sweet, but these were a revelation. They were unbelievably rich and savory, a perfect complement to the dark chocolate topping. It was evident that they were well-crafted and carefully planned to create a unique and delicious pancake experience.

I gave myself a bit of time before writing this review.

Let’s start with the only downside: I wish I could tell this directly to one of the waiters and the cook — what ears don’t hear, eyes can see. Next time you talk badly about a customer (especially when they’re right behind you), be smarter and wait until they’re gone. That really ruined part of the experience, even though everything started off great. That’s why I gave 4 stars instead of 5.

Now the good part:

I’ve eaten here twice. The first time was amazing — the staff were lovely and welcoming. The second time, Nicole, who took my order, was really sweet and kind. She was genuinely sorry when I told her what happened with her two coworkers — a very professional and caring attitude.

The food and drinks are great! The first time, despite the line outside and the fact that I was eating alone, I never felt rushed (which is rare and definitely appreciated). That alone makes the wait totally worth it.
