Fantastic ice cream, my new favourite!

My girlfriend and I were visiting Seville for a week. On the first day we walked past the Bolas ice cream parlour by chance and I was immediately drawn to it because of it's slick style. After I dropped off my girlfriend in the shopping street I went back and got to know Marcos the owner, a former city guide of Seville. 1 hour and two milkshakes later I was not only incredibly refreshed but also had a full list of places and restaurants to visit in and around Seville + I got to know a lot of the history of Seville. After that, we visited every day of our holiday again and never once regretted the visit. This is the best ice cream you will ever taste. It changed my life. The flavours are more diverse than I have ever experienced: pears in sherry wine, dulce de leche, tons of vegan options as well. Each one tastes exactly as listed. If you could make a perfect dessert from the essence of each flavour, this ice cream would be it. I had the raspberry lychee rose sorbet with a honey milk almond emulating a dessert traditional to the region. They tasted amazing together. My friend had the pistachio with the ginger cardamom chocolate, the winning combination! I could not shut up about it on the way home and I am STILL thinking about it. Probably the best ice cream shop in Seville and definitely one of the best ice cream shops in Europe :) Everything we tried was amazing, however Bolas' own unique line of ice creams was just mind-blowing (it's a very clever combination of traditional and unusual flavours we'd never tried before). It's worth noticing that they are balancing the amount of sugar really well and using natural, high quality ingredients. We were also pleasantly surprised by Bolas' collaboration with some Spanish charities. And their customer service was just top-notch: the guys who worked there seemed so kind, so attentive and knowledgeable, ah!
