Broth and Noodles: The quality of the broth (dashi) is crucial to an excellent ramen experience. Yukiguni take pride in simmering their broths for hours, resulting in rich, flavorful, and well-balanced bases. The noodles are another essential component and should be made in-house or sourced from reputable suppliers, cooked to the perfect texture.
Toppings and Condiments: Yukiguni pays attention to the toppings and condiments they offer. These may include chashu (braised pork), marinated soft-boiled eggs, nori (seaweed), menma (bamboo shoots), scallions, and more. They are thoughtfully chosen to complement and enhance the overall ramen experience.
Atmosphere and Service: Yukiguni creates a cozy and welcoming atmosphere, often with a touch of Japanese aesthetic. The staff is knowledgeable, attentive, and passionate about ramen, providing excellent customer service.
Consistency: Consistency is vital in maintaining the quality of the ramen. Yukiguni strive to deliver the same excellent experience each time you visit, ensuring that their ramen consistently meets high standards.

Read moreIn brief, a meal here is not worth the price.
I came expecting a 31 chf bowl of ramen, and instead received a 15 chf bowl of ramen with terrible service.
Not only did I have to wait an hour to receive my order, but the waitress never brought the appetizer. Even on a busy night, one shouldn't have to wait an hour after ordering for a bowl of ramen, especially when the restaurant has only 3 options to choose from. However, seeing the number of takeout pickups I saw while waiting for my meal, I got the impression this establishment gives more priority to takeout orders than to their seated clientele. By the time the ramen finally arrived, my tea was cold.
As for the ramen itself, the taste was good, but that's about it. I've never been served a ramen bowl with so few noodles in it, to the point that I left the restaurant hungry, and I'm not even a huge eater. Also, the included egg was very overcooked (totally hard boiled) and was served in one piece, rather than soft-boiled and split in half like one would expect in their ramen. The tonkatsu was also a little on the dry side and lacking fat.
When I was finally given the check, I was charged for the appetizer I never received. When I pointed it out, the waitress asked if she'd like me to bring it. After already finishing my meal after having waited for an hour? No thank you. The waitress slammed my change on the table without even a "thank you" or "have a good night".
If I'm going to pay 31 chf for a bowl of ramen, it better be the best bowl of ramen I've ever had. This was instead one of the least satisfying I've ever had anywhere...
Read moreItadakimasu! I was over the moon with this. After searching every town I visit for decent ramen, finally I've found some. It's what you'd expect from a ramen shop, fairly small, busy and bustling. Staff is accommodating, friendly and funny and food is absolutely great. I had the Yukiguni ramen that comes with three slices of tender (lean) chashu, an unfortunately hard boiled tamago, nori, leek, bean sprouts and all their fragrant oils (garlic, black sesame and spice). I added some extra yuzu broth for a citrussy flavor (best idea ever) and finished with an extra portion (kadamae) of those springy and wonderfully chewy noodles. I couldn't wipe that smile off my face and didn't even think of the CHF30+ that I just paid anymore. Other than the over the top pricing and the missed chance of a waxy tamago I have no regrets and feel nothing but gratitude for this lovely dinner. Domo...
