雲之南麗江斑魚火鍋 第一次吃到這麼鮮美特別的火鍋 若沒記錯的話，老闆當天的解說，斑魚又稱「鱺魚」 斑魚鍋的主角當然就是指斑魚囉 湯底是用斑魚骨頭熬上5個小時出來的，只加了一點點鹽巴，不加任何調味料 老闆說剛開始喝湯會比較淡口一點 可能是我本來就吃的比較清淡，並不會覺得湯頭淡，反而覺得剛剛好耶 首先，在還沒放入任何火鍋料之前，先喝原味的湯頭，只加了一點點青蔥的白湯味道清甜，喝完了一碗，保證會再盛上第二碗啦 接著開始吃鍋裡的魚骨上的魚肉，魚肉膠質豐富、軟嫩新鮮，唯一的缺點就是魚刺多了些，要有耐心慢慢挑魚刺 再來重頭戲來了，老闆端上斑魚...

單點米線、粑粑絲價格特別高，一碗 150 元上下， 實際吃起來味道滿好的，調味充足，卻還是能保持爽口的味道 但份量真的滿少的，配料種類也並不多，覺得如果多人聚餐加點作為好吃的配菜會比較適合

所以比較建議吃火鍋才來這邊用餐 火鍋滿有特色，湯底都是以魚骨為主熬製，四種鍋底都是一人 120...

台灣少見以魚肉為主打的雲南味火鍋 食材感受得到品質，只是價格真的偏高 同時也販售單點的雲南主食米線、粑粑絲類，湯、乾的都有 單點米線、粑粑絲價格特別高，一碗 150 元上下， 實際吃起來味道滿好的，調味充足，卻還是能保持爽口的味道 但份量真的滿少的，配料種類也並不多，覺得如果多人聚餐加點作為好吃的配菜會比較適合 所以比較建議吃火鍋才來這邊用餐 火鍋滿有特色，湯底都是以魚骨為主熬製，四種鍋底都是一人 120 元 屬於湯頭好喝、適合直接喝的類型，凍豆腐丟在這種湯頭裡面可以特別好吃 麻辣湯辣度有出來，麻度則還好 酸菜魚骨湯一樣有辣度，他們的辣都算溫順，可是吃久還是會累積，建議如果沒到特別會吃辣的人，還是選鴛鴦鍋搭配其他不辣的湯頭 肉品點了兩款魚肉，都非常新鮮 鱈斑魚我個人相當喜歡，油脂豐富的質地，非常嫩彈、紮實的口感，也絕對沒有魚腥味 比目魚肉同樣還滿不錯，不過油脂較少，相比之下就沒有呈現那麼鮮彈的感覺，偏向紮實的口感，還有比目魚特有的香氣 店家另外提供多種自製的特色醬料，薑末醬、麻醬、酸蔥醬等調味醬我覺得都滿不錯，調出來的味道也跟多數店家有些不同 口味上也都是屬於題味明顯，卻不會給人負擔過重的感覺，值得一試 店員服務氛圍不算特別殷勤，不過該有的提醒都還是有做到，依舊稱得上是周到 然而用餐期間其實除了送餐和提醒醬料可取用外，沒有明顯感受到太多額外的服務，原本的餐點定價也合乎餐點品質了，所以不太覺得有額外酌收服務費的必要

從店面搬到遠企b2了，空間比較小桌數多，中午時段人很多。老闆服務好，只是上餐較慢。 ——————二訪食記————— 推👍雲式麻辣牛米線💰220元➡️湯頭很棒，有些微中藥味又不過重。 雲式紹子米線💰180元➡️上面幾乎都是酸菜….跟想像中的紹子不一樣，吃起來有點鹹，不推。 推👍雲式大薄片💰220元➡️酸酸辣辣很開胃，好吃。 ——————初訪食記—————— 中午到店用餐，一進門就是一張舒適沙發可以坐，店內裝潢算是挺有質感的，店裡面有很多張四角桌還有一張圓桌，適合商務聚餐，店內人不算多，還有位置可以坐不用等。 店內一旁有一些醬料可以自取，取了辣椒來吃覺得還可以。 老闆很熱心的前來介紹店家特色餐點，於是點了雲式酸菜魚湯米線加牛肉💰220元、雲式山豬肉耙耙絲💰220元、涼拌木瓜絲💰60元。 雲式酸菜魚湯米線加牛肉💰220元➡️魚湯味道很特別，裡面有辣辣的酸菜，牛肉很嫩很軟，沒吃過這種特色口味可以試試，老闆有說米線口感比較軟。 雲式山豬肉耙耙絲乾💰220元➡️有另外附一碗湯➡️山豬肉有醃過調味，耙耙絲非常的Q彈好吃，附湯跟魚湯味道又不太一樣了各有特色。 最後離開前還是不忘再看一下那張沙發椅，網美躺那邊拍照應該很美。
