The service in the restaurant is good and I wonder that staff communitcate in Japanese among themselve. That make a good vibe for me link to menya in Japan.
The menu is easy to understand and you can customize your dish as you want, except the broth thickness and fat lavel. They also have English menu for you.
Today I try tonkotsu shio ramen, salt tonkotsu. I'm wonder that the restaurant serve tonkotsu with miso, with salt, and with shoyu ramen. Where I have never seen in Hakata.
As the menya name Hakata Koryu. For my idea it's stand for Hakata ramen. Which is ramen style from Hakata. Where located in Fukuoka area. The Hakata ramen style is tonkotsu base soup with thin ramen noodle, around 1-1.5mm thickness.
Back to the ramen, as many ramen restaurants I try in Taipei. I can say that tonkotsu ramen base thickness in Taipei is different from Japan. Since the soup is not thick as much as in Japan but still tonkotsu. Anyway, you still able to find the thick broth in some restaurant here. And for the salty, in some ramen restaurant in Taipei you can choose salty Taiwan or Japan style. So when I taste the ramen here in Taipei, as in this review. I will not compare to Japanese style ramen but I refer to ramen restaurant in Taipei. As I said, I have never seen Hakata ramen in combination of tonkotsu shio, miso, or shoyu. Or you can found such as aka, kuro, or shiro ramen in Japan but does not call Hakata ramen. The taste of ramen I've got here make me recognized the combination of Hakata ramen mixed with Osaka shio ramen. Where is tonkotsu broth is slightly thick and taste of salt broth mixing. Anyhow I enjoy the taste. The noodle also good as similar to Hakata, slightly bigger than Hakata maybe 0.1-0.3mm ha ha. Overall taste is good. But it's in between tonkotsu and shio ramen. If you love the thick broth of tonkotsu ramen. This menya is not. If you like Osaka shio ramen, this restaurant is ok for you. Anyhow, if you don't like salty ramen I suggest you to try tonkotsu shoyu ramen which could be slightly salty compare to shio tonkotsu ramen.
Overall is good, the price not too high, the service is good, and inside restaurant alike Japanese style ramen shop...

this was my first taste of actual ramen in the stewed broth, and it was original and fairly inexpensive, which is usually much more expensive in every city here. it tasted like a warm welcome from the locals, and while it wasn’t too special ,it was pretty good. however, their pan fried dumplings are insane. I am going to eat different types of fried dumplings at other places in the future, but i don’t think they can match the flavors here. it was juicy, tangy and filled with broth. especially it matched with the spicy and soy sauce so well. they are one of the best and the tiniest fried dumplings I would ever taste, and I am not mad about it.
