Had dinner on 18 Jun 2024 and the chef took time to explain the ingredients that will be used and the history behind some of the names.

This kappo omakase is a mix of raw and cooked dishes.

My personal favourite would be the buri sashimi and cooked keiji (salmon).

The freshness of the ingredients lingers with each dish. The menu is seasonal with the ingredients that are available.

You can see the dedication of the chef and his entire team, would definitely recommend.

Foreigners can contact them via IG for reservations.

There was another group with a 2 year old, so presumably they allow young kids to dine.

Overall, awesome experience and will definitely be back...

I’ve tried my good share of omakase both in Taiwan and San Francisco, but Akatobi tops the list with a generously portioned menu with delicate plates of fine ingredients. 赤鳶,一期一會的演繹 開餐前,料理長介紹盛在木盒中的食材,熟成數日的刺身、松葉蟹,處理的乾淨美觀。 菜單大致遵循 「懷石料理」的順序,「前菜、御碗、刺身、燒物、溫物、揚物、一品、食事、甘味」,左下角標上用餐日期、蓋上店章。 餐酒被推薦了「BeauMichelle」,這支清酒產自長野縣,使用葡萄酒瓶,預示這支清酒,帶有白葡萄的果香酸值,適合海鮮。(2015年於京都舉辦的「酒‐1錦標賽」奪得優勝) ————————— 食不厭精,板前割烹就像秀場一樣,團隊合作行雲流水。 其中印象最深的餐點 「前菜:瑩烏賊/萵筍/過貓/土佐醋凍」: 半截小指長的 #瑩烏賊,要去除眼、嘴,費工。土佐醋凍、紫蘇花洗腥明亮,覆於螢烏賊之上。山海融合,是精彩的前菜。 「#御碗:干貝真丈/木耳/黃柚」: 裝碗完成後,在漆器上噴水。 古代日本將軍用餐時,因為廚房與餐廳不在一個空間,預防餐食在運送過程中被下毒,所以,預先在碗蓋上噴水,如果中途開蓋,會破壞碗蓋上的水珠。 那御碗內的干貝真丈(丸子)有雲朵般的口感,高湯煮得透明鮮甜,黃柚平衡了甜、凸顯了鮮。 「刺身: 蜜柑鯛」 愛媛縣產蜜柑,為了消耗產能,將柑皮混入魚飼料中,投餵鯛魚。在咀嚼蜜柑鯛過程中,嚐出了橘皮香。 「溫物:海膽/芋餅/春菊餡」 油份充足的食材跟芋頭是絕配,北海道產海膽下的芋泥產自 #大甲,過篩後的芋泥鬆綿,期待日後看到更多的台灣物產。 「食事:海瓜子/青蒜」 赤鳶團隊在客人面前,用 土鍋炊飯、沸氣蒸騰,鍋內放了海瓜子,那是我吃過最好的米飯之一 ——————————— 「旬時」是懷石料理的重要概念,物隨季轉春夏秋冬,希望可以吃到四個季節的菜單,我對「赤鳶」有很高的期待。
