Maybe I'm not a chef but I've had beef noodle at over 100places in Taiwan because I'm a big fan of it. :( :( :( I seriously did not expect its beef noodle to be this bad. The beef was rough and one is even rough like beef jerky. I had to break it with my finger and I took a picture of that dry little piece of meat. Soup was average and noodle was too soft. I though maybe I just had a bad bowl and then I looked at my girl friend and she was already looking at me like she wanted to choke somebody....XD Given the price, I can easily name 20 other restaurants that are cheaper and better. Maybe it's just one of those days where they mess up on two bowls of soup, but it's still hard to imagine it to be like in the street markets level even on their bad day. If you are a tourist coming to Taiwan, please choose another place because this is not how our beef noodle suppose to taste like.
In addition, the service was terrible and disrespectful. Me and my girl friend went in real early and there were only 3~4 customers, we took a regular table of 4 and they told us to move and sit with two others in a smaller table in the corner. Of course they say that two people cannot take a table of four. I've been in Taiwan for a long time and I understand that..... even though there are like nobody there at the time. Few minutes went by and two gentlemen walked in and guess what, she let those two have that table of four. And what did she tell us earlier? Again I know they are popular and also expecting lots of customers, but there are also other restaurants just as popular but wouldn't treat us this way. Read moreOne day I came across a video on YouTube, it was about a head-to-head challenge between Beef Noodles and Vietnamese Pho in Taipei. In the game, the Beef Noodles representative was Shi-ji Authentic Beef Noodles. The result was irrelevant, but I remembered there was an interview with the Chef behind this famous beef noodles in Taipei. His attitude was quite arrogant, that makes me really wanna try it and see if it lived up to what this arrogant chef said.
The beef noodles come in two main styles : soy sauce soup base and salted soup base All beef noodles shop has their own recipe for their soup, some are heavy on the Chinese herbal tone, some might have vegetable or even fruit in the making of the soup to give it an extra layer.
Shi-ji is famous for their salted, rich beef bone soup base (white soup). The broth has no Chinese spice or herbal taste, unlike the soy sauce soup base. It was a rich and full of flavours kind of soup. The creaminess from the beef bone that has been simmered for hours, it was almost like a tonkotsu ramen soup but using beef rather than pork. You can feel the collagen from the soup sometimes sticking your lips together. It was amazing. Their soy sauces soup base (red soup) was delicious too, it has a rich Chinese spices taste, also full of flavours, a little spicy that makes you want more.
The other selling point of Shi-ji was their beef toppings. You can choose between tendon or meat or half and half. The tendon and meat has been stewed under low heat for hours, the result was their soft, silky, melt-in-mouth beef toppings, it barely needs chewing.
Gotta warn you about the spicy sauce on the table tho. A little drop of that chilli paste would be enough to make...
