I can see the potential in this place, but unfortunately my experience was a bit disappointing. The tacos arrived cold and soggy. Even after removing some of the toppings, the tacos were still soggy, drippy and freezing cold. The meat itself wasn’t properly heated and the flavor was overwhelmed by the heavy use of sauces. The queso also felt like it had just come out of the fridge—completely cold and unpleasant to eat.
My girlfriend had a better experience with her burrito than I did with the tacos. And I want to emphasize that the staff were extremely kind and clearly working hard. Thanks for getting back to me. I'm really sorry if my review came off as harsh—that wasn't my goal at all! I'm actually a fellow restaurant person; I'm from Korea, but I've lived in US for over 30 years and have worked in and even owned a few places myself. I'm currently in Chiang Mai to help a restaurant with their menu and sauces, so I know how much work it is.
Honestly, I liked your place a lot. The layout, colors, and concept are all really cool. If I thought it was hopeless, I wouldn't have bothered making a list of things to work on.
Just to be clear on a few of my points:
Tortillas: You're right, you don't need a press. I just thought since they were a bit thick and soft, a press could save you time and make them thinner and chewier, not hard and dry like they can get in a pan.
Nachos and Salsa: Your nachos were perfect, which is why the strange cheese dip and the salsa that wasn't salty at all stood out to me.
Staff: I get that people have different styles, but both employees were on their phones the whole time and were pretty unhelpful.
Food: I wasn't criticizing your recipe. The food just kept breaking when I tried to fold it. Maybe serving it with a fork and knife would make it easier to eat, like a pizza.
Ventilation: This is an easy fix. A simple wall fan on top of the main window when you're cooking would push all the heat and smoke right out.
Anyway, it's totally up to you what you do with this advice. I just hope the restaurant...
