Fusion Italian fine dining place with potential to be great!

I made a rather impromptu booking for the place in mid of January 2025. Was informed that the place was just opened a few weeks ago.

Going to up the restaurant, one would need to go thru multiple doors and narrow corridors. Seems to be a trend among the new establishments. It does build up the anticipation, but can also be quite intimidating as there is a lack of signage to provide assurance that you are in the right direction.

Located on the 56th floor, the layout of the restaurant didn't arrange the seating to allow the guests to take in the breath of the view outside; instead, the seatings are made to face the open kitchen. My view is that it is a missed opportunity as different seating designs should have been incorporated. Some diners like myself would definitely appreciate the direct view into the kitchen to see the magic; but certainly not everyone.

A nice touch to be brought to the kitchen area to meet the Chef and his team, and also get a quick introduction to the ingredients which will be used for the dishes. Obviously there are upselling involved, but done nicely.

Overall, the food preparation was of high quality and presentation are beautiful. The pre-main hamachi dish was plated into rose shape. Simple beautiful as was the taste. The fish was so fresh.

Wine pairing was spot on, and I had a really great time with the food.

And the service. Faultless. Water is topped up frequently, and plates cleared quickly. The assigned server and her manager were very engaging which uplifted the dining experience.

As the operation just started given the place just opened a few weeks ago; a few observations were shared to the team for their considerations.

Given time, enhancement to the menu and improvement to the dining experience, I am confident this place would blossom to a next level. Looking forward to...

I had an exceptional dinner at Sartoria by Paulo Airaudo Bangkok, a seafood-focused fine dining destination that left a lasting impression.

From the moment I entered, I was captivated by the elegant and modern interiors—golden tones, warm lighting, and luxurious finishes set the stage for an intimate evening.

The open kitchen added an exciting energy to the space, allowing glimpses of the culinary precision behind each dish.

The meal was a journey of creativity and freshness. Every plate was meticulously presented

The staff were attentive and genuinely warm, enhancing the overall experience with their care.

However, one notable drawback was the background music.

The playlist was an erratic mix of genres and decades—from punk rock to country—which clashed with the refined atmosphere. It disrupted the mood and made it harder to fully immerse in the fine dining experience.

I did share this feedback with the team, and I hope it will be taken into consideration for future guests.

Despite that, I look forward to returning—once the music better complements the exceptional cuisine and setting.

With that adjusted, this could easily become one of the standout dining...

Stepping into the restaurant, your gaze is immediately drawn down a beautifully hand-painted hallway guiding you to a wine area, uniquely perched atop mosaic tiles that echo the grandeur of an Italian cathedral. The interior of golden and mahogany brown tones combined with the vibrant music creates a warm and inviting ambiance for this standard of luxury. The open kitchen offers a mesmerizing experience, allowing you to witness the artistry of Michelin-level chefs as they create exceptional dishes with seamless precision under the expert eye of Head Chef Ales. All the ingredients were presented to us showcasing premium Italian and Asian produce which made the tasting experience that much richer and enjoyable when eating dishes which were works of art, such as the Hamachi blooming like a rose. The duck cappelletti, scallop with caviar in champagne sauce and delicate pralines were particular favourites. Thank you to the wonderful chefs and service for creating an unforgettable...
