So Im a chef in the United States in Texas/houston area. Ive worked with James Beard nominated Chefs and I have been on the travel channel with one of my former restaurants in Houston. I only say that so you the reader can understand my validation and rating of this restaurant Indigo. First of the ambience is breath taking as you walk through main entrance of the resort. Like absolutely gorgeous!! The restaurant is beautifully layed out as well. The service was outstanding, the chef came out to our Table (table touch). Chef and myself spoke for about 10 minutes, and he gave me the whole run through of his menu and some of processes he uses to create his dishes. From the conversation I know I was essentially talking to a Chef with michelin star experience. There is certain way these chefs talk and move. And his food did not disappoint, he made suggestions and we tried his appetizer specials!! Chefs smoked salmon is to die for!! The grilled lobster tail with fried rice, pineapple salsa/chutney phenomenal!! My sister had the seafood pasta also really really good!! For dessert we asked our server Christopher for suggestions. He immediately said the lava cake and housemade fresh ice creams and sorbets. We ordered one of each. I tried them all!! The lava cake is so rich and moist definitely made from the rich cocoa calbout dark chocolate but just amazing on the palate, the pear and honey sorbet is extremely refreshing on the palate. Much lighter than the chocolate lava cake but still striking all the notes of all well composed dessert. The cookie crumble ice cream amazing as well!! The dining experience from top to bottom was amazing. Food, service and atmosphere all stellar what more could you want!! I had to personally thank Chef again for a masterful meal and experience. And to be honest if i was back here again i would love to work(staige) possibly a day or two in the kitchen and soak up the knowledge that Chef possess. Read moreHonestly, I was really looking forward to this meal and Indigo restaurant to celebrate our special occasion and last dinner in Turks and Caicos. I've dined at most of the nicer / upscale restaurants in Turks and Caicos over the past several years, and sadly, my wife and I were quite disappointed in the service and overall food. The presentation is nice, fish (Mahi) was very fresh, and the setting of the restaurant is nice, and that's about where it ends for positives. Other than the hostess congratulating us on our anniversary, nothing else was mentioned or done during our dinner to help us celebrate it. In fact, the manager (or so he seemed like one) who served us, while taking our order, had his cell phone ringing loudly while I was making my order. Too many different servers were coming and going to our table, and nobody knew what was going on. Our other server didn't even know if we received our main entrees after 1.5 hours of dining there, and asked us if we even got our mains yet, when I had to ask to see the dessert menu after waiting quite some time after dinner. Awkward! Not once did anyone come check on us to ask if our main entrees were okay!! More interested in us ordering more expensive drinks rather than finishing off a less than stellar meal with a hopefully better dessert. The dessert came out, Deconstructed Banoffee Pie, which was not good at all. I voiced my opinion on how disappointing everything was, and the server did nothing to make our dining experience any better. After tipping generously, as I always do, and $300 USD later for a couple of two, I felt totally disappointed in Indigo and Wymara Resort, I will not be returning.
