My favourite pho place in Bristol. Yes it is cash only, and you need to reserve through calling or WhatsApp, but the food is consistently great and good value.
It's not really a restaurant for dwelling, it's fairly cramped inside and doesn't have the vibe for luxuriously chilled lounging around with friends. We were sat down, ordered and ate within an hour but it works great to then get dessert or another drink elsewhere.
We had a ginger beer and a Hanoi beer for drinks. For food we had satay tofu bao, classic beef pho and the pork rice bowl. It was all super flavorful, with flavours you can only get from proper marination and stewing. The pho broth was clear and delicious and the pho was topped with a generous portion of meat that was beautifully brisketed. My partner ordered the pork rice bowl which I tried some of and it was very tasty with a great serving sauce similar (if not the same) to the ones that come with the bun dishes.
Portions are pretty large, just the single pho fills me up...

I usually have the vegan options, which consists vegetable spring roles, tofu bao and tofu and mushroom pho. The rolls are freshly cook and fried to have the perfect crisp. The bao is is not too soft and a subtly sweetness and marshmellowy texture complements the slightly more firm fried tofu inside. The mushrooms that come with the pho are seared to perfection, to get rid of the slimeyness you usually get with undercooked mushrooms, without loosing the mushrooms natural flavour and texture altogether.
