This was my first time visiting at a 3-star Michelin restaurant as well as eating at the Chef's table. Firstly, from now on I will definitely attempt to do the Chef's table experience at a restaurant when it is available. It is a much more entertaining affair, and more interesting and informative experience than your traditional restaurant experience. Whilst preparing each of the individual and unique courses, the chef clearly explained the inspiration/ingredients behind each course. He also shared how L'enclume are trying to be more sustainable and how Simon Rogan has his own farm nearby in Cartamel to source fresh local produce for the restaurant. The chefs table experience also allows you to speak to other groups of people present and share their experience and why they are there and their opinions. It's a great experience for foodies and highly recommended. For l'enclume and Aulis Cartamel , the food is great, organic, beautifully presented and expertly prepared. My personal favourite is the Orkney Scallops and Corra lim pudding caramelised in Birch sap. This restaurant is a true English restaurant, that is worth 3 stars.

The most relaxed, yet awe inspiring dining experience I have had to date. The chef and sommelier know every little detail and tell the story of what you’re eating and drinking. It’s wonderful. As for the food, it’s so incredibly smart, yet remains accessible and familiar in its flavours. Every dish so perfectly presented. Ever flavour chosen for a purpose. It’s magic. Having the 3 stars sets an unfair expectation before you even walk in, however I can confidently say that they deserve those stars and have got them just by being the restaurant they are. Absolutely stunning and will absolutely be returning to experience the seasonal menu changes towards the second half of this year. Thanks to the Aulis team for a wonderful evening.

We came with high hopes for a big birthday celebration, and the wonderful team at Aulis exceeded them. It’s hard to live up to the hype of three Michelin stars, but Chef Cameron and Hannah did just that. And as our taxi driver Trevor said “they do it all with patience and charm”. Here’s to another 20 years! Special mentions: - The English seasonal mushrooms in miso butter, yeast, mushroom stock and house-made dark beer - ‘Anvil’: Caramel mousse with their ‘other’ miso, winter apple and spruce, paired with the outrageously good ‘I Capitelli’ Anselmi (which smells of mango and is pictured empty!)

One of the best dining experiences I have ever had. We were looked after by chef, Connor and head waiter, Max and they were brilliant. We loved the down to earth style of the service and the environment.

Aulis is a chef’s table style dining experience which you might imagine is a little daunting, especially when the restaurant has 3 Michelin stars. But we really didn’t find it to be that way at all. The service was a good mix of professional and warm.

The food was incredible. It’s so much more exciting to see the food prepared right before you and to be able to ask questions along the way. I won’t go into the details of the dishes as it is supposed to be a surprise tasting menu. Leave any preconceived ideas of what ingredients you don’t like behind and go for it. I visited with my partner and we decided to do the wine pairing. There are two types of wine pairing. A “tasting” option, and a more expensive “signature” pairing. We opted for one of each and shared, so we got to taste the differences and I would highly recommend...
