2 eggs + water – Michelle uses a bit of water with the eggs to achieve the moist, gooey texture of boxed mix brownies without any commercial emulsifiers. And because this recipe doesn’t contain any baking powder, eggs are essential for helping the brownies puff up in the oven.
Powdered sugar – The trick to making homemade brownies that are just like ones from a box! Powdered sugar contains cornstarch, which helps thicken the batter without the chemical additives you’d find in a mix.
Unsweetened cocoa powder – Michelle recommends using Hershey’s Special Dark Dutch-processed cocoa powder (I used Whole Foods’ 365 Cocoa Powder). Make sure to sift it if it’s lumpy!
Oil – While many recipes for brownies use unsalted butter, Michelle’s calls for canola oil, just like the boxed mix. I use olive oil because it’s what I keep on hand, and I love the rich flavor. Vanilla Extract – 1/2 teaspoon vanilla really amps up the chocolate flavor.

Fact the 1st - You will be talked to!! The staff here all seem to have an affliction which leaves them chatty and engaging. DON'T PANIC (words to live by, thank you Mr Douglas), outside of the UK this is called Customer Service, something that is usually expected so do not be afraid to respond. Maybe a comment about the weather??
Fact the 2nd - They have a large menu, but thanks to fact the 1st they will let you take your time to make a decision, maybe even recommend a beverage to drink while you read and make your decision, this is a smart move.
Fact the 3rd - This is a biggy... If you like something in a particular way why not try asking for it? I know that's not the stiff upper lip way but maybe that beer has made you a bit more relaxed? Like your bacon/onions extra crispy? Just try asking for it. Maybe say "Please and Thank You" if you think this might be an imposition.
Fact the 4th - If you are feeling a bit low go sit in the corner and bask in the warmth of Mr Noel Edmond's loving gaze.

Read moreThis was my 1st visit to the Lord Nelson and it probably won't be my last. I chose a "Big fat Greek" lamb burger, whilst my 2 friends went for the "Lord Nelson" burgers with beef. Getting served at the bar was slow, partly because there were other people waiting and mostly because of the 3 staff behind the bar, only one was serving, one was washing glasses and the other one was flitting about, but it wasn't clear what they were doing. There was a good choice of beers and they were not too expensive. The burgers were delivered reasonably quickly along with condiments and cutlery. They were good with a pile of chips, salad and plenty of fixings. The home made chilli sauce should carry a health warning but was delicious. My one gripe about the food would be that the bun was cheap and nasty and had no texture. I'm. not even sure if it had been toasted as it was just "fluffy". The place is insanely noisy with poor acoustics that echo every voice, laugh and scream, nearly to the point of challenging the relentless music. Verdict; Nice staff, very friendly, Nice food - could be better, but still Good value. Sit outside...
