I am SO thankful for this restaurant. I moved from Denver where there are hatch-green-chili vendors with roasters in parking lots across town and street taco vendors and killer Mexican restaurants everywhere. The chichharon tacos at Caro's were the best I've had in a long time... maybe ever... and that's no exaggeration. Great prices, amazing food and now... I can't wait to go back and try their green chili... hopefully they sell it by the pint/quart. My wife loved her steak burrito and is excited to return on Wednesdays for the Chili Rellano special. The dining area is not fancy but true to what you see in Mexico. I've lived in San Diego and travelled up & down the coast and dining at Caro's feels like you are on the coast.
