Located in a small plaza in Aliso Viejo, Orange County, Tacos De Birria Estilo Guadalajara is a popular local taco shop known for its authentic flavors and warm, inviting atmosphere. Though the storefront is modest and seating is limited, the restaurant creates a charming vibe with soft ceiling lights and roses placed on every table.
As for the food, the staff highly recommended their signature dish: 3 Tacos de Birria. These tacos feature slow-cooked, tender beef brisket, paired with a rich, flavorful beef broth for dipping. Each bite becomes even more satisfying when dipped, as the flavors intensify beautifully.
The Tacos de Carne Asada were more traditional, featuring chopped steak with a solid, classic taste. Meanwhile, the Taco de Blackened Shrimp stood out with four shrimp per taco, coated in a bold, black pepper-heavy sauce—a must-try if you like a strong, savory flavor.
They offer a selection of beer and chilled drinks conveniently displayed in an ice cooler. The staff are friendly and welcoming, even handing me the TV remote so I could switch to the sports match I wanted to watch.
There’s only one table with two chairs available outside, making it a potential option for those visiting with dogs. Plenty of parking is available right out front, adding to the ease of visiting.

I think this restaurant will do well overall. It has great potential, of which I didn't get to experience during my first visit, and I understand that challenges are expected when opening new restaurants.
The good part: Food was fairly good and the staff was warm and friendly.
The opportunities for growth: Service and food portion. Ordered dine-in upon arrival and served within reasonable amount of time. We then created a follow-up order and that request took over 40 minutes. There may have been a good reason for the delay, but I observed the manager chatting with repeat customers which probably gave me the wrong impression. In terms of food, the burrito had maybe 15% meat, and the rest was rice. The tacos were tasty but very greasy.

I dined in, but wasn't up sold a drink or offered a water. I normally would tip, but felt this was a fast casual restaurant selling me a $15 burrito so I opted not to. A 20% tip would bring the bill to $18 without a drink. $20+ on an a la carte Mexican burrito and a drink should be reserved another category of restaurant. At least include sides.
The chicken inside my burrito tasted like it was canned chicken. Texture included. Food was brought out to me, which is a plus. Restaurant had energetic music and was very clean. I really enjoyed seeing that. Customer service was fast. Someone helped me as soon as I walked in. The restaurant offers mobile phone charging, which is unique.
