It’s got wrinkled menus, blindingly bright chairs, and an interior that feels like you’ve stepped into a roadside cantina in Mexico that forgot it was north of the border. And I love it for that.
This is a joint where the food does all the talking. Dollar carnitas tacos? You heard right. In a world where avocado toast costs more than a night out, Mi Rancho’s serving up one of the best deals in town. The carnitas are tender, juicy, and packed with flavor—worth every penny and then some. And if you’re feeling a bit more lavish, the other tacos will set you back a whopping $1.50. Asada, birria, adobada, I tried them all, and each one was a little handheld miracle of taste and texture.
Everything’s handmade here, from the tortillas to the salsas. You bite into one of these tacos and you can tell someone put in the work. Fresh, delicious, and honest. This isn’t some sad, reheated fast food slop passed off as Mexican food; this is the real deal, lovingly crafted by people who know their way around a kitchen.

It’s hotter than a July afternoon in Guadalajara, and the decor is more “utility” than “design statement.” This place is about substance over style, no pretension whatsoever. First timers here may be a little confused with the ordering set up. Entering from the left door, you enter the sit down, where you will be seated, but they will not bring you menus, you have to grab one. Make sure. When paying you have to walk over to the meat market and pay over there. It’s a little confusing.
Takeout is where it gets complicated, enter through the meat market, and go order at the meat counter(they have taken orders at the cash station, but lately it’s the meat guys taking the orders. Wait around by the pastries and they will bring out your food with a ticket, take that ticket and pay for your food.
These tacos are seriously amazing, and I mean all of them. This is easily one of my favorite restaurants in all of Bellingham, and is a place I bring any visitors/family. If you haven’t gone, you’re missing out.

If you've never been there before, what you do is grab your own menu and sit down at any table you want. The waitress will come by to take your order and collect the menus. When they bring your food they also give you your bill. When you're done eating you walk past the restaurant and into the store to pay at the cash register. It's cheaper if you pay with cash.
