I often go to get some work done at The Tune Up, where Fleishman's parks and operates most days. After a couple of weeks of wondering what the big yellow truck is all about (and rave reviews from Tune Up baristas), I finally decided to order something. On my first Fleishman's foray, I ordered a reuben. The single sandwich came to a little over $20, but as owner Danna promised, it was "as big as [my] face". I have never eaten a reuben sandwich that I'd describe as "fresh", and yet, this reuben was fresh. The meat wasn't sad or limp, the sauerkraut was crisp, and the bread pleasantly dense. The sandwich came with a crunchy pickle on the side and store-bought potato chips. After a couple more Fleishman's trips, I've decided my real love is their salted bagel. I like to get "The Lucy", an egg salad sandwich with avocado and red onion, to start my day. It feels energizing and light, and at the time I order (around 10:30 AM), the bagel is still nice and warm from the oven -- no need to toast it! (I'm usually not an egg salad fan, but I appreciate how Fleishman's egg salad isn't overrun with mayo; the egg salad actually feels like a valid healthy protein option.) Having grown up in rural Kansas, I've never had a particular affinity for bagels. But, eating at Fleishman's has encouraged me to embrace the humble bagel -- which, admittedly, isn't so humble when Fleishman's makes it. Danna starts her day at 3 AM, when she begins hand-rolling her bagels a couple of blocks from the food truck at the former Fresh Thymes Marketplace spot. Danna is enthusiastic about everything she's selling and will not hesitate to give you input and free samples to help you come to the right decision! I heartily recommend giving Fleishman's a try. Yes, some items are a little pricey, but places like Moe's and Einstein Brothers really can't hold a candle to the items that Danna makes. Two totally different beasts; I'd call Danna's bagels artisanal, which, to me, justifies the price. Cheers to Danna, her sunny disposition, and her yummy, fresh food!

Just kinda shocked that a white fish bagel with not even a side cost me over $17. I was done ordering and I didn’t look hard enough on the menu to check the cost when she said the price, by then I was too far in to walk away, and I though I had misheard - my bad. But seriously I’m from London, there just a couple weeks ago, and I’ve never see a price like that before. Sure it’s fresh and the prices of everything is up ..etc etc but wow! By comparison I had the best bagel sandwich of my life in a brick lane bagel shop for $10 - and they are paying London rent, not in food truck.

Would have given stars for food but because of our incident I am giving 1 star cuz google made me. I went to FB in Boulder today with my daughter, brother and his kids to get what my daughter said are the best breakfast bagels I'll ever eat. Ordered our food I will say I was taken back by the man taking my order as he was a bit rude, but my daughter said trust me the bagels are so good you won't even remember how rude he was. $50 and 40 minutes later I would never imagine what happened next. The buzzer goes off to pick up the bagels and my daughter goes to get the bag. I lag a bit behind her and see her looking at the bag and then turning around. As I get closer I see she's clearly in tears. "What's wrong", I asked "he wrote Mexican Family on our bag"?! What and then the argument ensues with me yelling and him saying he didn't mean to write it" you didn't mean to be a racist? Did you write down all these other people's races or ethnicities? No why cuz they are all white." Wife comes to the window and asks what happens we tell her. And she is just as shocked and confused. He tells her he didn't mean to do it. I am livid. We aren't Mexican I say we are Puerto Rican but that's not even the point you're a racist. People are just there standing watching. I call him an idiot and was cursing a lot; not my proudest moment but when your kid is crying and has never experienced racism (she is white passing) you freak out. He storms out of the truck and says " I'm a veteran of the USMC" to which I reply "oh really well my brother is also a Marine he fought for this country too, he did 3 tours in Iraq. Just because you fought for the USA doesn't make it okay to be a racist." His wife or owner of the truck could not have said sorry more & gave us back money and Thanks my brother for his service. Super nice lady. Out of all the people standing two girls left and one lady came up to make sure we were okay. No one else did or said anything. It's crazy. Needless to say the owner also told my daughter to come back for a free bagel but not sure she will ever go to this food...

Their bagels are incredible and absolutely a step above any other bagels in the Boulder-Denver area. When I do stop by, I order a taylor ham, egg, and cheese and it is as good as any bagel I've had in NJ/NY.

However, I often opt against going here because the service is painfully and unacceptably slow. It is typically a 15 minute wait, minimum, for anything (even just a toasted bagel with schmear) which I find baffling and very frustrating. And every time the apology is the same- "thanks for your patience, it's been a busy morning." An apology which is particularly awkward on the days where I have been the only customer.

What is the point in apologizing or acknowledging your customer's frustration if you have a systematic service problem and you continue to do nothing to remedy it? I would be inclined to get their bagels on a regular basis when out running errands, but the horrendously slow service deters me.

I want this place to succeed, because their bagels are undoubtedly the best I have had in CO, but I don't have the time to regularly patronize them until they figure out how to serve in a...
