As explained by the excellent server, Doug, the menu changes "seasonally", and in different words explained seasonally is loosely used to describe a menu that adapts to what ingredients are available at the time which are the highest quality/best value.
I had the filet mignon because scallops were not on the in-house menu, even though they were at the time on the website menu. While they were on the appetizer menu, they were still not available because the quality wasn't to the chef's standard.
I absolutely hate truffle due to a bad experience in a foreign country and I can never eat truffle again. A lot of the dishes had truffle in one of the sides on the entrées or as an ingredient in appatizers. Just know going in that there are absolutely NO SUBSTITUTIONS, although you can eliminate something from your plate. My filet came out medium, although I ordered it medium rare and I'm wonduring if it was because I was irritating enough to ask for a substitution... Doug said he could make it happen because of the severity of my hate of truffle and because it was my birthday. I ate it, it was still good - I say "good" because the flavor was delicious, but I only order medium rare and lean more to the rare side, so on my plate a medium steak usually finds itself swimming in steak sauce. This one didn't. I ate it all, so I refuse to say bad. It came out without the substitution, which was fine. Doug insisted that I have the item I suggested might be substituted, I said no thats fine, he insisted and went back to the chef and got the fingerling potatoes. They came out with good flavor but dry, I guess the chef was making a point or they could have been tossed in butter or EVOO.

We opted for the tasting menu, which turned out to be a fantastic way to experience a variety of dishes. The steak tartare was expertly prepared, fresh, and full of flavor. The French Caesar salad had a refined twist that elevated the classic dish. My salmon was beautifully cooked, delicate, and perfectly complemented by the wine pairing.
Speaking of wine—every pour was perfectly curated to match the flavors of each dish. The wine list is clearly chosen with care and expertise. My husband, who had been here before, couldn’t resist ordering the burger again—he swore it was one of the best he’s ever had, and judging by his expression, it didn’t disappoint the second time around.

You’re meant to have an appetizer, entree, and desert. You’re meant to dine over an extended period. When we booked, they give 1.5-2 hour period for dining. The cost of the food is a bit on the high side for Bradenton. The food was good, almost great, but not quite at the level a restaurant that’s looking to create this type of dining experience should be. Their staff is excellent and highly trained on the dishes. The environment is great, and seemed to offer 3 areas of dining, a more lit room with tables, a dimmer lit area will booths for more intimate dining, and I think I saw chairs at the bar, which would lend to a more casual experience. The reason for the 4 not 5 stars is two fold. The prices mentioned earlier, and their lack of liquor license. They offer alternatives to classic cocktails where they try and pair things that don’t require the license, and while a good attempt, falls short. I recommend sticking to beer or wine.
