Day Trip to Buda

Was on the way back from San Marcos and decided to stop at a a place a little off the beaten path as far as BBQ goes. I voluntarily drove past Lockhart and all time great like Blacks, Kreuz, etc. to get here, and I'm happy to say that I was not let down. Their prices are in line with other places serving up similar quality BBQ and the service was great. I ordered moist brisket, a link of sausage, charro beans and mac & cheese. The brisket stands toe to toe with any brisket I've had. It was much better than the last two times I've been to Snow's. The sausage was great as well. You could tell a lot of care went into making it and the flavor was spot on. The beans were tasty with the right texture, but not a stand out but I loved the mac & cheese, it was thick and creamy with a great queso blanco cheese sauce. Pickles and pickled onions were good, though the onions could use a little more bite, and while the sauce may not be for everyone I liked it being decidedly different than most other places. It has a good vinegar level, but a well balanced smooth sweetness to it as well. Everything was so good that after I was done with lunch I decided to order ribs to go for dinner. It's a bit of a drive for me to make a trip just for it, but you can guarantee any time I'm driving past Buda I'm going to stop at this gem.

Louie’s easily will become a local favorite. Hands down their simple approach to BBQ can win the hearts, minds and stomachs of those who seek traditional Texas BBQ. The brisket has 1/4 smoke rings, not over powering and tastes of organic fresh beef. The charred ends have a savory and perfect blend of seasonings. Not too much pepper and not too much salt. The ribs which in my opinion are the most difficult to smoke we’re absolutely that....perfect. Fresh pork flavor lightly seasoned to address the hints of sweet and salty. The meat fell off the bone and made for a simple pleasure. The sausages are not just any sausages, innprticular the ocaxca infused sausage was a delight and ended my experience with Louie’s BBQ on the perfect note! A huge shout out to Mike a pitmaster who can be described as a simple guy with the gift to gab and bbq. Thank you to all those involved during our experience. If I forgot your name I apologize. My son and I are looking forward to another Louie experience in the future.

Update: The owner reached out to me to obtain a detailed account of my experience. Before he got in touch with me, he had already taken it upon himself to refund my entire ticket. Because the owner is a man who stands behind his business and his product, we will be returning to further sample the menu and give the pork another shot. He went above and beyond to make our experience right, and he was clearly using my review as a chance to improve his level of service and customer satisfaction. I will produce a separate review when the second visit occurs.

We ordered two potatoes, one brisket, one pulled pork. We also ordered mac n cheese and street corn. My wife wanted a drink, but there was a box in front of the ordering window full of warm drinks with no ice or refrigeration. Though we did take it home, everything was cold. It didn't seem as though it was prepared hot at all.

The street corn was good. The mac n cheese was pretty good too. The brisket was also very good, but the pulled pork was phenomenally bad. It was moist yet flavorless. It tasted like it was made in a crock pot (instead of a smoker) with no seasoning applied. I am further annoyed by the fact that the cashier recommended the pulled pork to me instead of the brisket.

The potatoes came with butter, sour cream, bbq sauce and cheese but not nearly enough. We both added more of each when we got home. There's only a small drizzle of bbq sauce added to the potato which isn't near enough for super-absorbent potatoes.

The portion sizes are excellent; each potato makes two meals. As mentioned, my wife's brisket potato was good, but there wasn't enough flavor I could add to make my pulled pork...

My family loves barbecue and we love trying new places. We were not disappointed tonight when we tried Louie’s BBQ. When we walked up to it all you could smell was the sweet aroma of the various meats that had been cooked that day mixed in with a light smoke.

The staff was friendly and knowledgeable and were happy to answer questions or even let you get a sample. As we were doing a large order to go they offered us some popcorn with their rub sprinkled on. It was an amazing profile of flavors. Well beyond the salt and pepper blend and it was at that first bite that I knew the meat was going to be amazing.

We ordered every meat except the chicken (they had sold out for the day). The Brisket had a beautiful bark on the outside that was complimented by the beautiful smoke ring. It was cooked to perfection.

Ribs were on point. The rub really shined on the ribs. Didn’t overpower them like some ribs can but instead it complimented them. The meat came off the bone clean and melted in your mouth.

Pulled pork was on point. This was where you really got to see the mastery of flavors. You got a small taste of the rub but man when you combined it with the sauce it became next level.

Potato salad and beans were a crowd pleaser. My only wish on the beans was to have some burnt ends mixed in but even without that extra flavor from the brisket the beans were excellent.

Can’t wait to go back and have the queso...
