My girl usually orders Tonkotsu and I usually order the Spicy Tantan ramen. The broth of both ramen are delicious, and the ingredients with the egg, meat, and garnishes are well-balanced.

Compared to other ramen spots, Miso Ramen Bar offers a good anount of well-cooked pork. Tonkotsu Ramen has about 4 pieces of pork and the Spicy Tantan has fair amount of ground pork.

The broth tasted rich and the eggs were perfectly cooked. Every ingredient in the ramen compliment the overall dish well, and unlike Hokkaido Ramen in Morrisville, you don't need to pay extra to get egg and corn with your ramen. The default servings are satisfying enough but if you want to adjust spiciness level, my girl was able to do that by asking for chili that she could add.

Customer service is nice; There's usually a tall European-looking gentleman who served customers well. We got a punch card that will almost get us a free ramen once we get 10 stamps. You can self-serve water, and they offer other beverages as well. Of course, a bottle of Asahi or Sapporo would go well with ramen.

We've also been to the Raleigh location once but the Cary location's smaller area, we prefer this location as it's more accessible, more welcoming, and better-lit. The Raleigh location didn't even have punch card that could get you free ramen (we even asked if they can stamp our punch card from Cary location but sadly, they don't do that).

It's nice to see anime always playing on Miso Ramen Bar's TV. The smaller area can be concerning when this place gets packed. We haven't yet invited a family group to eat here but since we highly-recommend it, we will soon. They have some tables outside the small space but hope they will be able to expand.

My minor issue with Miso Ramen Bar is its limited menu. There are appetizers and we've tried the 2 pieces of pork buns but we thought that most of their appetizers are overpriced and just not appealing. Even 2 skewers are priced around $8 to $10. Door to Door in Cary has better appetizers. It would be nice if Miso Ramen Bar also served cold appetizers like beef tendon or tripe. We also tried rice bowl dish once and it's nothing special.

If you want great quality ramen, Miso Ramen delivers. We will definitely return again. I'd love to give this place 5 stars in the future if they're able to expand their menu and improve non-ramen options. It would also be nice if they offered Spicy Beef like Hokkaido's. Nonetheless, Miso Ramen Bar in Cary, NC is currently the best ramen spot in the Triangle NC area that...

Relaxed, friendly place with good food. I saw a line on my way in, but they took orders quickly and most people were sitting outside. The guy at the counter was super nice and totally willing to accommodate a substitution of tofu for the usual chicken. The girl who brought my food over was also very polite.

I started with takoyaki, which had a nice crisp to them. They're a bit smaller than takoyaki from other places, and I did wish they had bonito flakes on top, but they were tasty and filling (I brought home a few).

I then got one of the curry ramen dishes, which taste-wise was very bright and flavorful. The spice was definitely there and it enhanced the flavors of the other ingredients, especially the tofu which really soaked it up. Very large portion, plenty for a hungry adult, and I ended up bringing some of that home too. One detail I liked was that the bok choy was cut into smaller pieces. The last time I got ramen with bok choy (at a different place), it came as a giant leaf that was kind of tough to eat. But here the pieces are able to mix in well with the other ingredients.

In general I also like that you can get your own water and utensils/to go boxes as needed.

I was checked in on once - this is a casual, serve-yourself kind of place so wasn't really expecting that - and the guy who took my order also offered to bring me a to go bag before I had to ask for one. Really great customer service. I grabbed a loyalty punch card and I'll plan...

This is a special place that will now be my ramen shop. Tonight was my first experience at Miso but I know ramen. I got the Tonkotsu ramen which I have had at every ramen shop in the raleigh/cary area. It's my litmus test. If you can produce a good base Tonkotsu, then you have the right foundation and knowledge to make other foundations in my opinion.

The noodles are perfect with bounce and chew. Not your 1$ ramen package. The Char Shu is succulent and well seasoned. The bowl is accompanied by the most fresh ingredients that sing with the broth. I always start with mild spice for and ramen to test the true taste of the broth. I would go medium to spicy if you are not adverse to heat/spice. Mild was tame as expected.

The atmosphere has the perfect "Ramen Bar" feel with bar seating and some inside seating at tables. A lot of seating is outside on picknic tables and they are covered. Expect to sit next to someone to get a seat a peak hours as it is so good, it is so busy. There is enough seating, but it fills up. Good sign!

As I said I will be back to try my next taste test. Shoyu. Another foundational staple. I'm so excited to find this place.

I will preface this review with two facts. I eat a lot of ramen in Japan, and this place gave me diarrhea. Let that bias guide your acceptance or rejection of what comes next. The Tonkotsu ramen had no flavor to the dashi, and it was artificially milky. The chashu was fatty soft but had no flavor. The noodles were chewy and not bad. The spicy tantan ramen was much the same except way too salty. Furthermore, enoki mushrooms are not a topping, but assuming chef's license here, why the heck were they raw? The pork belly buns were poor. The meat was like the chashu, and the buns were store bought with a bad aftertaste. The space is small, but it makes effective use of space with the walls lined with seats. I'm desperate to find a decent bowl of ramen in this state. This isn't it. Forget that it's $5 in Japan and made by gurus who invest 24 hours in solid dashi. I'll pay, but it doesn't exist here. No one giving a good review here is likely to have had the real stuff. I'd give the miso ramen a try, but with diarrhea striking before I made it home, no way.

Meanwhile, there are ramen places that forgo their own honesty and try to emulate other chefs or try to capture the nostalgia of a late night bowl enjoyed in Tokyo Station. Miso Ramen brings you in with a standard offering that tricks you into thinking you’re about to get an unassuming bowl. What they give you is nothing of the sort. Their ramen is a wonderful exploration of flavors done in a way that is respectful and mindful of the art of ramen. Their curry chicken bowl is by far the best I’ve ever had. Their Tonkotsu is not. But I absolutely loved it because it wasn’t trying to be the Tonkotsu I hold dear in my memories. It was a Tonkotsu done in the style and care of their chef. Running a ramen shop in Cary, NC is probably hard (thus a menu that offers to explain what is offered and with unnecessary items) but I wish the team at Miso the utmost success. I doubt you’ll find a better ramen bowl in town.
