Very disappointing. I bought a baguette from them yesterday, apparently baked that morning. Everything about the baguette was disappointing: the texture of the crumb was very dry and uniform. A good baguette should have a slightly chewy, plushy crumb, with some moisture and structure, as result of how it ferments and is shaped. the flavor was very bland. Perhaps they are using all-purpose white flour and not bread flour? Perhaps there is little salt in the dough? Perhaps the fermentation is happening too fast? No complexity here at all the crust was pretty thin, also not complex or tasty. It was crunchy, which is nice, but wasn't deep. the size was pretty huge. Maybe more than four inches wide, despite being lighter than a normal baguette of the same length. This is a baguette! Even Publix subs are narrower.
We deserve better. I think the reality is, there is no competition for good baguettes in Orlando, so this company has a monopoly on supplying restaurants and hotels.

Was one of about ten customers who got their $18 sample bag for 1/3 the price. I believe they use high quality King Arthur flour and have been in business for more than 25 years. Take a look at the photos. I am certain we will be thrilled. We even have a guest from Pennsylvania coming for a week whoâs a volunteer at a local flour mill up north.
