Stopped in here for breakfast and coffee before a long road trip. Beautiful atmosphere and we intended to stay in and eat, but things went awry fast. First, our drinks (a mocha and hazelnut latte) were mislabeled as single shot so we had to verify they were double as we paid for and ordered. Secondly, the drinks were too hot, which is obvious for anyone accustomed to drinking high end espresso drinks. I sipped my drink to test it out, but in addition to missing foam, the milk was over heated and also not frothy (not to mention the lack of attention to the pour). I drew attention to this and let them know it was too hot. I couldn’t taste the drink beyond the temperature. I was told to add cream or ice to cool it. This quickly told me that they didn’t know what is the point of a latte. I mentioned this so she proceeded to pull out a thermometer and dip it in the cup which had been sitting there more than a few minutes at this point. It didn’t rise above 145, which is not right. I’m guessing the thermometer is not calibrated. This was confirmed when they told me they just ordered them and were not planning to calibrate them for six months. She looked at me and said, “ya, I’m not remaking this. We are a small new business”. After recovering from the shock, I responded that I’d be happy to purchase another latte if it could be made correctly. She then started questioning me about what temperature is appropriate and I said I would like a properly foamed latte and can they do that. She kept pressing so I just walked away and left with the food. And the food—- Great concepts there. But our croissant came to us burnt across the top (easy to scrape, but a sad representation). And my avocado toast (which explicitly read as “on toasted sourdough”) came cold and untoasted. They responded when I asked about it that I “was right about that” and they remade it toasted.

We ordered the Avocado Toast with Kimchi and the Not So Simple Avocado Toast- both were excellent. The kimchi toast had the expected spicy kick, while the Not So Simple version was incredibly smooth and creamy.
The coffee is solid, and they offer a few signature drinks that look visually stunning and unique. We didn’t get a chance to try them, but they’re clearly a highlight of the menu. Another interesting addition is their mushroom coffee, which is still relatively rare in mainstream cafés despite its growing popularity.
One of the biggest strengths of this place is the speed of service. Even during peak hours, with long lines and a busy atmosphere, they manage to get orders out incredibly fast. The setup behind the counter is clearly well-organized, with a large team working efficiently to keep everything moving. Whether you’re getting coffee or food, you won’t be waiting long.
However, the atmosphere is not designed for lingering. No matter if you’re dining in or taking your order to go, everything is served in paper cups, which feels a bit off-putting. It’s not environmentally friendly, and it disrupts the experience—sometimes you just want to sit, relax, and enjoy your coffee without feeling like you’re in a rush.
The space itself also leans toward high-energy rather than cozy. It’s loud, constantly busy, and not really a place where you’d want to work or spend extended time. That’s not necessarily a downside - it’s just the format they’re going for, and they execute it well.
Overall, INSTILL COFFEE CO is a great stop for high-quality coffee and a quick, well-made meal. If you’re looking for a fast, efficient coffee shop with excellent food and unique drinks, this is the place. If you prefer a slow, relaxing café experience, it might not be...

Honest review:
☕️Coffee & Drinks: unpretentious, reasonably priced, easy to follow, savory hot & iced coffee/coffee drinks. The seasonal menu is rotating but they are fun and I highly recommend trying something new out (the cereal milk latte is SO GOOD!)
🥐 food & pastry: both are equally as good as the drinks they serve. They even have GF options for those who are looking for them! Haven’t had the chance to try to coffee cake, but this item is ALWAYS sold out quickly in the morning. The croissant cinnamon roll will absolutely have you head over heels. The pastries are a bit on the high side as far as price, but they are delicious.
Service & atmosphere: The young ladies that are the baristas and normally quite sweet, but everyone once in a while a bit standoffish, but maybe they’ll get to know me as a regular. The important thing is they do answer your questions and provide very good service. Atmosphere is very chill, open concept, I don’t think I could ever work remote here in the mornings as there a lot of people conversing, but I’m sure that mid morning/brunch hours it’s probably a lot more quite.
