I mark the discovery of Chopsticks Japan in Governor’s Square Mall as being amongst the most personally momentous occasions in hole in the wall dining experiences. I’ve since eaten at the Madison location with my brother, a friend, or Han Solo once a week to every other week for the past 2 years.
I can’t comment on the chinese dishes as I only order a few appetizers, hibachi, and sushi. Their egg rolls are top notch. They don’t judge you for ordering non-traditional varieties such as the Philly cheesesteak or avacado club. Don’t be afraid to order them as everyone is in agreement that they are quite delicious.
Quality of ingredients used for hibachi is respectable. Quality of seafood/fish overall is also worthy of note. Last week, I noticed that the carrots used were fresh. White rice is always cooked exactly perfect.
The kitchen is accommodating of sensible and respectful requests. They will combine steak and scallops to replicate a hibachi dish that I used to order long ago at a Shogun Express (and quite naturally, they nailed it).
The sushi has never been disappointing. The first item I ever ordered and the one that hooked me was a spider roll at the mall. It’s not on menu at Madison, but they will make it for you upon request. It’s not a problem.
The smoked salmon has the most uniquely satiating deep smokeness. You’re going to want to get that smoked salmon roll or the Philadelphia.
Dining area is small. I wouldn’t consider it appropriate to bring a large party. Bathroom is always immaculately clean. I did have the unfortunate experience of walking into the men’s room right after a smelly, sweaty guy had left it. I hope you can understand why they can’t really be held accountable for that.
In terms of staff, some of the delivery drivers have seemed liked shady characters. Reasonably expected. However, I am proud of staff that I recognize as having ran the business over the past couple of years. Their discipline is strongly evident.
They give it the feel of a real kitchen, a real dining room, in a real home with a real family that makes real food. Best hole in the wall...

Was in the mood for some Asian style food.
I hate going to chains, so I saw this place on the map and wanted to give it a try.
Young girl, possibly under 18 stood at the register stoically as we walked in.
We were the only customers there, so I said hello … then hello and then waved…twice.
She just blinked at me as if she could not hear or did not understand something.
I said something like “Hi, is everything ok?”
I said “Don’t want to assume, but is English spoken here?”
She literally remained stoic, blinked at me after this third verbal interaction with her. BIG Strike 1
No photos on the menu of the food or fresh food to show us what it looked like. Strike 2.
My daughter was getting anxious and just blurted out her order.
Again, the lady blinks at us, then asked about sides (with a reluctant tone).
When we were asked about drinks I noticed that the fountain drink machines were out of order, and the beverage cooler had a very tiny selection of beverages, all without any idea of the price. Strike 3.
Being that I did not want to partake in the $5.00 a soda drink scam, I decided I had enough and walked out.
Went to old boring Panda Express because:
They greeted me and were polite to everyone who walked in the establishment. It’s FREE, it costs nothing folks.
The food was visible and there were menus with pricing, so I knew what I was getting.
The drink fountain was actually working.
Note to management:
Get someone on the register that knows how to interact with customers.
3 stars is me being nice on a Sunday.
Even if your food was the best in the area (unlikely), people will not want to deal with being ignored at the register, your lack of fountain drinks, your lack of photos or fresh food examples to show.
But I will not go to this place again, especially with so many other...

We haven't been in some months, so tonight I splurged and spent $50 and got: Veggie Lo mein ( Fantastic) sesame chicken : Not Good - My gripe here is it was dry , the sauce was off and the pieces were hard and crunchy like it had been overly fried. sesame chicken should not have a pinkish sauce it should be a brown carmel color... My chicken and my daughters GT chicken looked exactly the same except mine has sesame seeds.
I ordered online, got a text confirming the order but never got a text when it was done and ready to be picked up. My entree definitely didn't taste fresh at all. Please for the love of everything holy DO NOT get chicken fried rice it has NO FLAVOR. Chopsticks DO PORK FRIED RICE ....TASTES WAY BETTER. We got the chicken to try it and plain steamed rice is definitely better.
