Bare bones atmosphere, a few tables and chairs, a walk-up service window, and no servers, but very good food at reasonable prices in the corner location of a strip mall.
My son is a vegan and loved his bean and rice burrito with guacamole ($4.45). It was huge!
I am not vegan, or even a virgin for that matter, so I ordered chips and guacamole ($2.80), carne asada tacos ($2.35 each), and cheese and onion enchiladas ($3.95) ala carte. The chips were a tad too greasy, as if they had just been reheated in the deep frier, but pretty good with a little shredded cheese and a bit more guacamole on top. I needed some more guacamole, so I went back to the counter to get an additional side order for the chips and my tacos., but when I asked to pay I was told "no charge". Wow ... gracias!
The carne asada tacos came on large corn tortillas and were heaped with sliced beef, diced onions, pico de gallo, guacamole, and a little shredded cheese ... just the way I like them ... buenísimo! They also have a small salsa bar with three different salsas (two red and one green), some pico de gallo, fresh cut lime, and pickled jalapeño and sliced carrots. They were all great, but I had to taste each to find out how hot they were, so some signage would be my only suggestion.
The enchiladas were also very good. The red chili sauce was spicy and tasty and there was just the right amount of cheese to sauce ratio. The only drawback being way too many sliced onions on top instead of a few diced onions inside the enchiladas. The taste was pretty much the same, but it was hard to see the enchiladas through the onions and they were a bit overpowering.
In all, the food was fresh, excellent, and very reasonable. Coming from Lawrence, Kansas where they do not seem to know what good, authentic Mexican food is, Rodolfo's was a breath of fresh air in more ways than one. Being a cold Colorado night, the place was a bit chillier than expected, so dress warm and enjoy some good food.

Read moreWe have given this place our business regularly for over 3 years. They make excellent food and we love supporting small business but good food isn’t the only thing a restaurant should offer. Customer service should also be an important part of a successful business. They NEVER get our son’s order right! We live several miles from this place so it’s beyond inconvenient to get home and discover one of our orders is incorrect. We learned very quickly to always check each order before leaving, however, there have been a few instances where we may have forgotten or got sidetracked. 100% of the time the order has been wrong! (And we aren’t talking about a complicated order. He simply requests no guacamole on his tacos. He has an allergy.) One evening, he made the long trek back to ask them to correct his order. They closed in 10 minutes and told him they couldn’t fix it. Everything was turned off, yet he saw one of the guys cooking food. He’s a regular customer - at this time he was probably there once a week. It’s sad they couldn’t care enough to fix his order. He stopped going there for several months and then decided to give them a second chance. Unfortunately, the exact same thing keeps happening. How hard is it to NOT put guacamole on the tacos? They continue to never get his order correct. We are back to always checking our orders before leaving. Today, the same thing happened and there was a long line of people. He came up to the counter and expressed his disappointment with the situation and was met with a very callous attitude and told to “calm down”. He didn’t yell or make a scene. He literally just told the guy at the counter that he’s been coming there a long time and they never seem to get his order correct. This guy then proceeded to talk to his cook in Spanish and they both laughed. Wow! Clearly they don’t value their regular customers. Such a shame! Needless to say, we will not be giving them a...
Read moreWe are still looking for our "go to" Mexican place in the Tri Lakes area. We'll go back for take out, but it's not a full service dining restaurant. I had chili rellenos, which is my test for authentic Mexican. Done right, they are slightly crunchy, and have a great chili flavor, lots of cheese and some sort of sauce. These were not cooked quite long enough, so were pretty hard, but had plenty of cheese and a good flavor. The accompanying rice and beans were pretty good.
One guest had the carne asada plate, with seasoned beef that was quite bland. The quality of the beef wasn't great either. My other guest had the pollo asado plate, which was much better. The meat was well seasoned, delicious in fact. All meals came with very soft (home made?) tortillas.
Two big problems here - one is the place was pretty dirty. The floors had not been swept much less mopped in ages. And there were broken floor tiles right in front of the register. Don't look at the ceiling if you want to keep your lunch down. The front glass was dirty, etc. It needs a top to bottom deep clean, and regular cleaning. 2nd, you can't serve plates with flimsy plastic ware. I understand cutting corners to keep costs down, but what they have is virtually unusable. Foam plates and cups really aren't environmentally appropriate these days.
Value is decent - $55 for 3 of us with sodas is pretty good for quality food prepared fresh. We'll go back, but only...
