They don't do half stars on Google, but I thought I would round up because I felt they did great on things oversimplified by the markers mentioned here. This place is unassuming and pretty well hidden. There's no frills here, so I didn't want to mark them for atmosphere because it's pretty obvious most of the effort goes into the food and not the presentation of the restaurant, which I appreciate. It really is Texas-style BBQ in New Hampshire. I have eaten BBQ in Texas many times, so I can say that with a degree of confidence. I had the brisket, beef cheek, and pork belly. I also had the Texas Twinkie. Simple review for that, if you're into jalapeño poppers and ever wonder what one would be like with a little meat inside as well, then wrapped in bacon, you should try it. The bacon wasn't crazy salty, and if you are sensitive to salt, the cheese and pepper flavors help balance it out. For the BBQ, what sold me is that I told them it was my first time there and they let me have a taste test of the meats before I bought them. It shows they have confidence and pride in their product.
So important points: all the meat was juicy, tender, and had flavor on it's own; the Mac & Cheese was creamy with a unique spin on the flavor that didn't overpower the cheese flavor; the 3 sauces that they have weren't necessary, but compliment the flavors already there and really balance the palate out. A lot of BBQ places tend to dry the outer parts of their meat a little too much, but this place doesn't have that problem. You can literally see the cooked dry rub on the meat, so you know they're not stingy with the seasoning. I avoid Mac & Cheese at a lot of BBQ places because they tend to use cheaper cheeses that either have that weird gritty feeling or just a sour lingering aftertaste, but what they serve here is definitely not that. The sauces are good, not exceptional, but they compliment the meats the way they should and that's the most important thing. I do have to say their mustard-based sauce was my favorite out of the 3 in terms of rounding out the flavor experience. I was a bit hesitant at first because a lot of mustards already have vinegar, so I had the expectation that the sauce would be very acidic, but the acid balance was on the right side of enjoyable for me. The sweet wasn't too sweet which happens at a lot of places. The OG had just a little bit of kick, so if you're really into spicy this may not be enough for you, but it was just the right amount for me because I could still enjoy the flavors of what I was tasting. The ONLY gripe that I had (which isn't that big a deal, but it wouldn't be fair if I didn't offer some type of constructive criticism) is that the Nilla wafers I got with my banana pudding were stale. That's the only reason I gave them 4.5/5. For me, to get a true 5/5, if you serve it, it shouldn't be stale.
Overall, I'm definitely coming here again and probably fairly often. If they were to offer specials, it would definitely be more often. I hope one day they become popular enough to relocate to a more visible location with comfortable dining space, as long as they can keep cooking the way they do, and can keep prices as low as possible with meat supplies costing as much as they do. Read moreToday was my first time trying 603 BBQ located at 126 Hall Street in Concord, NH and I’m already looking forward to my next trip here. I got the sample platter which is 3 meats and 3 sides for 40$. BBQ is expensive cuisine and the value here was incredible especially considering the quality of the food. I got the brisket, pulled pork, and jalapeño cheddar sausage for meats and slaw, mac n cheese and cornbread as the sides. I also got a Texas Twinkie (Jalapeno stuffed with cream cheese and brisket, wrapped in bacon, smoked and doused in house bbq sauce) and banana puddin. There wasn’t a weak link in the entire order. Everything was phenomenal, fresh and bursting with flavor. The brisket had perfect bark and smoke ring and it was super tender, seasoned perfectly and very flavorful; I used a plastic fork to slice into it, it didn’t even need a knife. The pulled pork had a very nice kick and was bursting with flavor. The jalapeño cheddar sausage was one of my favorite sausages I’ve had anywhere. The Texas twinkies were also delicious; never had one before but I’d definitely get one again.
The sides were all phenomenal also. Mac and cheese was creamy, savory and very flavorful… one of my favorite Mac and cheeses I’ve had anywhere. The cavatappi pasta was cooked perfectly. Very unique Mac and cheese. The slaw was perfect: crisp, fresh and dressed perfectly. I am a huge slaw fan and this is some of the best I’ve had. The corn bread had a nice outer crust but was still super moist and tasty. Also a huge cornbread fan and this really hit the spot.
They gave us 2-3 homemade sauces with the platter which were all extremely delicious and addicting. I actually asked if they sold the sauces because of how delicious they are and they mentioned they would be selling at least one type of their sauces soon. The BBQ here is so good that the sauce isn’t really needed but I highly recommend trying all of the sauces because they add even more to the flavor bomb that the food here is.
I haven’t had a chance to eat the banana pudding yet because my wife and I ate about half of the platter and were stuffed. We had a ton of leftovers so I can’t say enough for the value here… perfect quality and quantity. This is easily my new favorite BBQ spot in New England. These guys are slinging serious heat. If you like BBQ and live in New England, this place is definitely worth a road trip. Check these guys out! I will be trying everything on the menu on my future return trips.

These guys have broken the "Matrix" with their brisket sandwich that I had, Keanu Reeves would be proud. I worked as a pitmaster at KC's Rib Shack for almost five years & would have thought it couldn't get much better, but I was horribly wrong. Located next to Lithermans Limited Brewing Co. in the same building, they're a great companion to pair some of their beers with. They deliver their food to the brewery from the kitchen next door & sitting next to a couple at the bar who ordered a killer platter (Pictured below) & were having a "When Harry Met Sally" moment eating, I figured I'd just waltz over after & try it myself. With the lingering taste of a excellent beer MISGUIDED ANGEL DIPA still on my pallet I grabbed that bomb brisket sandwich I was talking about earlier to absorb the flight & pint I had sucked down previously. The mac & cheese side that came with it was fire & a nice hefty portion, along with the sandwich I thought I would have to find someone to roll me to my car after. They should keep a wheelchair handy just for that situation, since I'm sure I am not the first to get that full. 🌝🍔🍻🔥🤦♂️
After the sandwich the guys hooked me up with a rib to sample that was biblical in flavor being super tender & juicy with just the perfect amount of sweetness to the finish. I also was given a nice big turkey leg to take home which paired perfectly with the SNAKE OIL BAPTISM Lager 6-pack I scooped when I left Lithermans. The guys who run it Andy, Ben, Jake & Andrew really have something on a different level happening here & were super friendly & accommodating. Looking into the kitchen while placing my order it was super clean & practically spotless, which is a tall order when working with anything BBQ related. They say enjoying food is the next best thing to sex & what these guys have been doing here proves that. I'll definitely be back next time I'm in the area with my friends to make sure that more people I know try this delicious BBQ! 🔥✌♥️🍺🍆💦
