I saw a little line in front of Eve's and thought to myself, "Hmm, that place must be good." I got in line and was met with very friendly service. I ordered a pineapple fried rice and a pad Thai. After I placed my order, a wave of customers came in. The stand only had two people working, and I could see they were hustling.
I'll be honest, I waited about a half an hour for my order. When I picked it up, the guy behind the counter was very apologetic. I asked if they're normally so busy and he said this was exceptionally busy. I was hopeful the taste would make up for the wait, and I can say without question: it was worth it.
This was without a doubt the best pineapple fried rice I've ever had. A balanced blend of spicy and sweet; fresh, crispy vegetables; tender, well cut chicken; and fluffy, savory rice.
