You may not want to read my ramblings-on about Pho so I will let you know now you're at the right place. Pho Chau is excellent.
I love Pho. My only regret is i waited till my late 30's to try it. Since then I've eaten enough pho to consider myself a connoisseur.
I have a habit of ordering the same thing over and over. Pho is no exception. I always order a large Pho and fresh Spring Rolls.
I can usually tell whether a Pho restaurant is good or not by the spring rolls alone. Spring Rolls take time to make. If they're on your table to fast they were probably prepared ahead of time. Spring rolls need to be made to order so the noodle remains fresh, and not hard and chewy from sitting around to long. The next thing I look at is the peanut sauce. A good peanut sauce is made fresh in house and not poured from a bottle. Pho restaurant are known for fresh healthy made to order cuisine.
While waiting for your Pho. Locate the table caddy. containing small white saucers, chopsticks and spoons. Fill four white saucers with hoisin sauce and add a drizzle of hot sauce.
Pho is served in a large or small bowl accompanied with a side plate of bean sprouts, basil, jalapeno, and lime. Now that the Pho has arrived you should immediately add the contents of the side plate into your Pho. Make sure to separate the basil leaves from the stem and squeeze the lime juice in.
Pho should be eaten with chopstix. They make dipping your noodles into the hoisin sauce easier.
It's time to eat. Keep in mind there are no style points awarded when eating Pho. The trick is loading then dipping your chopsticks into the sauce held by your left hand making sure not to give any back to the bowl from where it came before it makes it to your mouth.
If you do this correctly. When you have finished there should be four almost empty saucers of hoisin, several soiled napkins, a look of disgust on the person next to you and a smile on your face.
Oh yeah, there still broth and this is the best part. If you have room there is no need for a spoon. Just slurp it right out...

Not only is Pho Chau more affordable, it is/was more expansive. I ordered the chicken and the seafood pho (I'm not even going to try and butcher the names in Vietnamese), essentially a 2 for 1 deal, a pork banh mi at $4, and boba tea, through Favor, my favorite delivery service in Dallas aside from private delivery. I'm not a fan of mango, but missed the driver's question "what flavor...". Of course I got mango. It was amazing. Bahn mi, amazing, two meals from the sandwich alone. It is clear the broth is made from the heart, real bone broth I haven't tasted since I was a kid but with an explosion of herbs my body needed. What a treat. I spent roughly $45 with fees, minus the driver's tip, and had 5 meals from it. Each was as good as the last or better. Told a friend, she responded that Pho Chau was her favorite (before I told her where I ordered from) and she told me how the broth is made. "Kevin is the best!", she said. I always order the same dishes...the 1A Spring rolls and the 4P Large which is the star of the show, THE PHO!
Let's start with the spring rolls. They are freshly made, packed with large shrimp, veggies and come with a side of delicious peanut sauce. Two to an order but the perfect start to lunch, in my opinion.
The star of the show is brought out piping hot. Steam just pours from the top of this fantastic soup. The 4P comes with eye of round steak and meatball. The steak is so tender and does come to the table a bit uncooked but that is purposely done. As soon as you submerge the thin steak in the hot liquid, it cools to perfection and stays super tender. I always add a squeeze of lime, a good squirt of Sriracha sauce and a heap of fresh bean sprouts to round out this phenomenal bowl of soup. Can you tell I'm passionate about the pho?
