11/1/18 - Just came back here today since my first visit and wow, what a difference. The places is much brighter, the atmosphere was much nicer, and the staff was super friendly. I love the new menu and all the options. The prices were very reasonable as well. The wings were much better this time around but the Chicken Cajun Bowl with Rice and Beans I had was missing something. My co-workers and I agreed that it needed the same sauce you would get as if you were ordering one of the tacos to tie it all together. It was just a little bland without it but we did love the portion size. I will definitely be coming back though!
01/2018 Just came back from Baja Coop and I wanted to write my review before I forgot. My first impression when I walked in was that it was a little drab. It just didn't feel very inviting because it was just a little too dark in there and there needs to be more color on the walls to make it feel warmer. Maybe some more cool paintings or pictures would help. Also, it would feel more welcome is there was someone there to immediately greet you when you walk or if the person running the cashier would say "Welcome to Baja Coop" as soon as you walked in. It would also be helpful is someone asked if this was the first time you've been here so they can help you with the menu.
The food was pretty good here. I got the hot wings and chips and a cajun chicken taco. For me, the wings could have been crispier. It felt a little rubbery to me. They either needed to be cooked a little longer or at a higher temperature. The corn chips and salsa were good. The cajun chicken taco was much better than the wings and that's what I would go back for. I really think your restaurant should focus more on the tacos and have more variety like (pork belly, steak, etc...). Some lunch specials on the tacos would definitely make me want to come back more often. Like 2 tacos, chips, & drink for $9. For about $4 each taco, it gets too pricy for lunch IMHO. Also, having an all you can eat chips and salsa bar would be amazing and would help bring people back.
Overall I had a good first experience from this restaurant and I will go back for the tacos. I do hope they make some improvements as it's just not some place that will be on the top of my mind right now when we go out to lunch. Good luck guys.    Read moreI'm on a mission to try every Mexican restaurant in Dalton...just hoping to be wow'd by one. It's been a dismal start I have to say and I almost missed out on this little place of heaven simply because they are small and have a limited menu.
Figured what the heck - I love taco's and wings, let's give them a try! The place is small and easily missed on Hamilton but oh so worth the stop!
Adorable interior with cute lights along the whole ceiling. I could have done without the multiple tv's showing sports but hey - this IS Dalton.
I have tried the chips and queso - both fabulous. The chips are not your traditional corn chips found in most restaurants but hearty and fresh. The fried avocado - which is hands down the best I've ever had (so scrumptious!!), the shrimp taco's - well seasoned and well cooked which can be rare at restaurants as shrimp are so easy to over cook.Can't forget the wings - fantabulous! Beautifully seasoned and tender and delicious.
The chef even re-made an order for us (without us asking) because he wasn't satisfied with the quality. That is truly the kind of person/passion you want working in the kitchen. Service is fantastic. I can't think of anything bad to say and cannot wait to go back. I have finally found my winner in Dalton and I shall no longer long for really...

We have been to this restaurant several times and every time it takes a while. We are very patient people and normally not in a rush. On this visit, which will be our last visit, We ordered light so we could have dessert. Not only did it take them over 30 minutes to deliver us 4 tacos, then we waited an additional 40 minutes on dessert that never came. I overheard our waitress ask the lady that just stands in the window, about our desert. I overheard the Lady tell her the kitchen is trying to get the food out now. In a nutshell, she was not worried about our time or our dessert. When I walked to the counter our server asked the lady, who stands in the window, Will you please take this off so they can leave? She continued to stand there with her back to us until I said something, then she finally turned around and began making excuses that the kitchen staff was shorthanded. We’ve been there numerous times and they have the same amount of staff every time we have went. If you value your time and love to get what you want, not what the lady in the window thinks you should have, don’t visit Baja Coop.
