I grew up with my best friends being vietnamese since first grade. I ate a lot of vietnamese food in my time with his family. Not just the stuff you get at restaurants but the real stuff you've never seen nor heard or before lol. I was practically a member of the family. Like everything else prices of Banh Mi have gone up. I grew up eating them when they were 2.50 to 4 dollars a sandwich and it was buy 3 get a 4th free or buy 4 get a 5th free at many Banh Mi shops in Washington DC. There used to be some places like that here in Denver too. Those days are over though now. I don't go as often anymore at now 8 dollars a sandwich but when I'm craving one it is still worth it and has the BEST Banh Mi hands down in Colorado that I have been to. I've seen some new trendy places price them at nearly 14 dollars which is an absolute joke. This place doesn't skimp on the meat like Lee's sandwiches chain does here and they use garlic in their mayo/butter which really ups the flavor 10 fold. There is parking available but it is shared with the restaurant next door so could be pretty packed during the peak hours.
I've had several different banh mi sandwiches and their coffee (Their plastic packaging tend to be #1 PET, so generally recyclable). Only downside is that their iced coffee is prepared ahead of time (ice is added when you order), so you can't quite bring your own container in to avoid using the straw and plastic cups.
Their rolls are crisp on the outside and super soft on the inside and though they are a little big for the amount of filling inside, its flavor is good enough on its own.

I got a special "hey, you're aware we're closing for two weeks for a family vacation right? don't come back until June 25th" because I HAVE biked to get banh mi when they weren't open before.
For a solid three weeks, I would bike to the deli (big kudos for the bike racks!) and get sandwiches every day that they were open. It helps that the location is very close to the South Platte River Trail, so it's a quick and easy 30 min bike ride. Their vegan combination sandwich is very very good.
After I get my sandwiches, I would bike 4 minutes to Huston Lake Park, set up my hammock, and hang out while eating delicious food. Once I leave Denver, my memories of hanging out by the lake munching on scrumptious banh mis will stay...
