I can't believe I haven't reviewed these folks before. I love that Zach is cultivating a community of bakers through events like bake fest, baking classes, and the fact they give out free starter with a handy card with ratios for maintaining it. As someone who regularly bakes bread myself, this is a bakery I trust and feel a strong connection to. Anytime I'm not baking bread myself, this bakery is my sole source of bread (it's that good, and something I always enjoy every time). The birdseed loaf, 60/40 whole wheat sourdough and morning buns are some of my favorites. I also enjoy a lot of the rotating varieties. My partner and I took the sour dough class and I ended up learning new things and better honing some of my skills. Read moreSaw these guys on Instagram, so I went online and was lucky it was the weekend as they are only sorta open (Fri Sat Sun only).
Headed up to Curtis Park in the Five Points. Their location is just north of 24th on east side of Curtis Street, inside an old brick building. The inside was cozy and inviting.
Bread and breakfast were delicious. The brioche egg bun with prosciutto and parmesan was exquisite. As tasty as anything I’ve had in a while, cooked perfectly. My partner loved her danish and although I personally would have added more jam to the brioche jam bun, I couldn’t complain.
Overall, I think the attention to detail is obvious when biting into this bread. So fresh! Their website details their approach which is what drew me most. The owner seems to really care. Apparently they have a podcast too!?

Read moreI’ve been going to the Pearl Street Farmers Market every Sunday for as long as I can remember, and discovering Rebel Bread there during Covid was one of the best things to come out of that time. Their seeded sourdough is unmatched, and honestly, everything they make from pastries to classic loaves is next-level delicious.
The lines have gotten wild since they’ve totally blown up and rightfully so but I’ll still wait every time because it’s that good. That said, I was so excited to find their brick and mortar so now I get my fix without the weekend chaos.
Also, the staff, especially the girls who work there, are amazing. So sweet, kind, and just genuinely lovely people. And shoutout to them for giving out sourdough starter for free which I’m now baking with at home.
